This week, I’m going to live on soup especially this healthy vegetable detox soup. It is much needed after a couple of weeks of letting loose. I have to. My veg intake has been fine, and some of that veg has been deep fried. (Hanging my head in shame right now). 

So, this soup, this Healthy Vegetable Detox Soup is for me to make up for that time. Also soups and cold weather go hand in hand. The main difference here is the cooking method and the addition of some herbs and spices.

This is a healthy vegetable detox soup that has been made extra yummy. Have you heard about the zero point Weight Watchers Points cabbage soup? Basically, all you do is put all the vegetables, stock and tomato paste into a pot, bring it to a boil then that’s it. The cabbage soup diet has a similar soup.

I did try it and I could not cope with the taste of it. It was bland yet tangy. No. Just no. So I had to make up my own version.

Yes, mine involves a tiny bit of oil so veggies like onion, celery and carrots can be slowly sautéed until sweet which creates a rich beautiful flavour base for this soup. Then i add dried herbs and spices that really add a flavour punch to the soup. Some spices have been chosen specifically for their detox properties. E.g. Fennel and Ginger

Feel free to add other vegetables of your choice. Courgettes, beans, asparagus, cauliflower all work well. High carb vegetables such as potato will also be fab but they raise that calorie count and therefore point values (for anyone who follows weight watchers) quite a bit.

Ingredients

  • 1 tbsp Oil
  • 2 small Onions diced
  • 4 cloves Garlic crushed
  • 1/2 inch Ginger crushed
  • 1 tsp Red Pepper flakes
  • 1 tsp dried Oregano
  • 1 tsp dried Thyme
  • 1 tsp Fennel Seeds
  • 2 Carrots chopped into 1/2 inch rounds
  • 1 Celery chopped roughly
  • 1 Red Pepper cut into cubes
  • 1 Green Pepper cut into cubes
  • 400g Tomatoes crushed
  • 850ml Stock Veg or Chicken
  • 1 large White Cabbage shredded
  • 2 tbsp Smoked Paprika
  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • 1 tsp Cayenne Pepper
  • Salt and Pepper to taste
  • 2 tbsp Lemon Juice

Instructions

  1. Heat oil in a large pot over medium heat. Add onion, garlic and ginger and cook for 5 minutes.

  2. Add red pepper flakes, oregano, thyme, and fennel seeds and saute for 2 minutes.

  3. Turn heat down to medium low. Add carrots and celery, cook, stirring occasionally, for 10 minutes. 

  4. Add peppers, turn heat up to high and cook for 2 minutes. Keep stirring throughout.

  5. Add tomato, stock, paprika, cumin, coriander powder and cayenne. Bring to the boil, then simmer for 7-8 minutes over a low heat.

  6. Add the cabbage, cover the pot with a lid and simmer for 25 minutes.

  7. Add salt and pepper to taste.

  8. Ladle soup into bowls. Squeeze in the lemon juice and serve.
