Toasted Caramelised Banana Porridge – This is one of my favourite breakfasts and it is insanely delicious. Soft, gooey, sweet and creamy.  This really is the perfect banana porridge and you will love it, mainly because it tastes like dessert! It’s so warming too, which makes it a great option at this time of year.Toasted Caramelised Banana Porridge

Chilly mornings call for cosy creamy porridge. Caramelised bananas add the most wonderful sweetness and the chocolate chips take that sweetness to dessert level. So these Caramelised Bananas can be made in the oven but cooking them on the hob adds that beautiful glaze. 

Toasted Caramelised Banana Porridge

In autumn/winter I love starting the day with a steaming bowl of hot porridge to keep me warm and fuel me up for the day ahead. Infact I could have it for lunch or dessert too! Cinnamon is the perfect warming spice for this time of year and combining it with bananas always works. You can mix up the toppings and change things up as much or as little as you like.

Also i think the bananas look really pretty and that kinda thing is important in winter. It is too cold for ugly food. Hahaha. These oats with caramel soft bananas and chocolate chips can also have some of the following added to them:

toasted cocoanut flakes

peanut butter

pretzels

sea salt

blueberries

strawberries

apples

matcha (trust me on this)

Whatever you like basically!

Something magical happens when you caramise bananas, the crunchy outside is to die for but so is that melty soft centre so basically just make them!

By the way, Bananas can get stuck to the pan sometimes so I like to keep them chunky and let them caramelise on one side before carefully flipping. I also add a dash of water to the pan.

Ingredients

Porridge

  • 70 grams Oats
  • 250 ml Almond Milk
  • 1 tbsp Maple Syrup
  • 1 tbsp Almond Butter

Bananas

  • 1 Banana sliced into thick coins
  • 1 tsp Maple Syrup
  • 1 tsp Water
  • 1-2 tbsp Brown Sugar
  • 1/4 tsp Cinnamon Powder

Additional Toppings

  • 1 tsp Chocolate Chips and other toppings of choice

Instructions

  1. In a small pan, over a medium high heat add the water, maple syrup, cinnamon and brown sugar. Once melted add the banana slices. Cook for 4-5 minutes  let it fry and carefully flip. Continue to cook for another 2-3 minutes.

  2. Add the oats and almond milk to a pot and cook over medium/low heat until the oats are creamy. Stir in the almond butter and maple syrup.

  3. Top the oats with the caramelised banana and choc chips and enjoy!
