Completely unrelated to the programme but one of the contestants was talking about his business. One of the celebrities from Made in Chelsea who has a sweet business – Candy Kittens and is the grandson of the guy that makes Digestives or something – basically Mcvities. So he was saying that he is addicted to sweets because his parents were so restrictive with treats. I am the same and that worries me. It is pretty confusing being a parent because you can meet 100 people who will have done 1 of 2 things and the results vary. So a house full of treats may result in a child growing up loving sweets or hating them and vice versa. What a conundrum. I guess you have to do what is right for you. 

By the way, aren’t hese mugs adorable? They are from Urban Outfitters and it is the most I have ever spent on a mug in my life1 Probably because it is part ornamental but mainly because my son reallllly wanted this mug and he waited 3 years to get his hands on it. No exaggeration. I was basically so reluctant to buy it and then smash it on the way home that I kept thinking that I would go back in with the hubby and pick it up and then but it would always be gone. This pattern was repeated several times until I finally got my hands on one. WOOOO. In the interests of being fair, I got my daughter a pink one. I live about a 40 minute walk away from town and I knew that paper may not cut it because I am the type that would smash it to smithereens on the way home. Talking of elephants, the recent WWF campaign about elephants being poached for their tusks is so so sad. 

I guess I am in the mood to be distracted today….I keep veering off randomly!

Anyway these biscuits give me a warm feeling inside. They have all those Autumn/Winter spices going on and are really easy to make as well as being vegan and gluten free.

Vegan and Gluten Free Ginger Biscuits

Vegan and Gluten Free Ginger Biscuits are a necessity in my house. My kids love ginger biscuits and whilst I would love to always give them the treacle sugar laden type, I can't.

Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes
Servings 15

Ingredients

  • 200 grams Almond Flour
  • 3 tbsp Maple Syrup
  • 1 tbsp Coconut Sugar
  • 50 grams Coconut Oil melted
  • 1 tbsp Mollasses
  • 1/4 tsp Bicarbonate of Soda
  • Pinch Salt
  • 1 tsp Ginger grated
  • 1/3 tsp Ground Ginger
  • 1/2 tsp Cinnamon

Instructions

  1. Preheat oven to Gas Mark 4, 180 C.

  2. Add all the ingredients to a blender and blend until smooth.

  3. Wrap the dough in cling film and leave in the fridge for 10 minutes.

  4. Roll the dough out to desired thickness. I prefer thin biscuits - 0.5 cm. (Place some cling film on top of the sough to make this easier.


  5. Cut out biscuits using a cutter. I used a 2.5 inch cutter. Place  biscuits on a tray lined with baking paper.

  6. Bake for 14-16 minutes until golden brown.

  7. Leave to cool for 10 minutes and them pop onto a cooling rack.
