Watermelon, Mint and Feta Salad
Try this super refreshing watermelon, mint and feta salad during the heat wave. This is a light and easy salad to put together that contains only a few key ingredients.
Is it even Summer if you haven’t had a watermelon? I think not. My kids LOVE Watermelon and ask for it all throughout the year. On occasion I have had to wrestle a watermelon out of my daughters hands in the supermarket because winter and watermelons = not a great combination.
Iv’e noticed a lot of new sign ups to the blog this month so hello to everyone that has joined us. I am so excited to share my journey and learning with you. I have some really cool things coming up that I hope will prove useful to you. I realise that at the moment everything that I am sharing may seem a bit vague but I am desperately working in the background to get resources together to share with you! At the moment my focus is on making the information clear and easy to understand and I don’t want to just lift things off the internet, then add my logo to the bottom because I appreciate that it takes a lot of time and effort to put info together in a concise manner.
It’s interesting that even the Doctors and NHS are now starting to think about Naturopathy as a real thing rather then some mumbo jumbo, airy fairy nonsense. Yesterday I was listening to a podcast by a Doctor and when he started talking about the Circadian Rhythm (I will share some stuff on this soon), the impact of certain foods on anxiety and adjusting lifestyle factors for health, I nearly dropped my spoon but I didn’t because I had just made a boom (my kids have started saying this – I do worry about the wider meaning of said word) cacao porridge with flax and tahini.
I seriously considered sharing my breakfasts for the week this week and then I thought about it realistically. I had guac on gluten free rice crackers with eggs this morning and I was so happy but taking a camera out at breakfast after the dreaded school run..erm..it wasn’t happening. I reckon people who film those ‘what I had for breakfast this week’, film them in the afternoon and make it all in one day. I hope. Then I won’t feel as inadequate lols. I admire them because a) that is some work honey and b) they must have serious fridge space which I never ever do.
It is really important to use a ripe watermelon in this recipe and here is how you pick one:
- Pick out up and assess weight. It should feel heavier then it looks.
- Look for the yellow spot – A creamy yellow spot means it is ripe.
- Give it a whack and listen for a deep hollow sound.
In terms of benefits, obviously watermelons are super hydrating because they are over 90% water. They are also nutrient dense and contain Vitamin C, Vitamin A, Potassium, Magnesium, Vitamins B1, B5 and B6. Watermelons also help lower inflammation because they are rich in the anti-inflammatory antioxidants lycopene and vitamin C.

Watermelon, Mint and Feta Salad
Try this super refreshing watermelon, mint and feta salad during the heat wave. This is a light and easy salad to put together and contains only a few key ingredients.
- 10 lb Watermelon Cut into cubes
- 1/2 large Cucumber Cubed
- 1/2 large Red Onion Sliced finely
- 1/2 small handful Mint Leaves Torn
- 150 - 200 grams Feta Crumbled
- 1 tbsp Honey
- 2 tbsp Lime Juice
- 1 tbsp Olive Oil
- Salt to taste
Place watermelon in a large bowl. Add the cucumber, red onion, mint and feta over the top.
In a small bowl which together the honey, lime juice, olive oil and salt and pour over the salad. Serve immediately.
- This salad needs to be made just before serving otherwise you may have to swim to it. Don't forget your arm bands kids. Slight exaggeration but you know what I mean.. 🙂
- You can add dates to the salad like i sometimes do, but please add them right at the end!
