Guess which one I took?

Easy to make, delicious and all made in one bowl..you can’t go wrong really. I really am a stress baker. As soon as I feel any negative emotion, I go and bake something. Anything from cakes to macarons, i just HAVE to bake..and 99% of the time, I don’t actually eat what I have baked or I have a tiny sliver of it. Not with these Wholesome Oat Cookies with Chocolate though because I knew that they were pretty healthy so..why avoid them?

I also make these Wholesome Oat Cookies with Chocolate on meal prep days for the week ahead. It means I always have a snack to hand when an energy dip occurs. The kids do too!  I’ve been snacking on these all week long.

So this week is a relatively busy week and I love that. Firstly we have to travel out of town twice to hospital appointments. Then I have a meeting with a brand that I am really excited about. I have a jam packed photography schedule and I love photography. I am realising that more and more now but I am also aware that I need to push my creative boundaries and start videos too. Coming soon!

By the way, 2 weeks ago my laptop and phone died. My heart was in my mouth. Not just because I’m an addict (which to some degree, i think alot of us are) but because I hadn’t backed up my laptop and I use my phone for work! So with the laptop, I went through the whole recovery process and it just wouldn’t boot back up. This went on for 3 days and then I went to the Apple shop. By some miracle or merely by just entering the shop, the laptop turned on as normal. It played me. Made a show of me. By the way, this was without them even trying. He just pressed the button and I turned beetroot purple as it came on right before my eyes. It turns out that there was some common problem and he did something afterwards to make sure that it won’t happen again..(can you tell from that last sentence that I literally don’t have a clue what was wrong, what he did and why it won’t happen again?)..LOL.

Anyway with regards to my phone..the battery drains as soon as i look at it and my camera stopped working a month ago..so this week I have to get a new phone. The Apple magic didn’t work on the phone. 

Anyway, make the cookies and enjoy them and know that they won’t make a bee line for your hips. Tag me if you make them!

Wholesome Oat Cookies with Chocolate

You have to make these wholesome oat cookies with chocolate! They are the perfect guilt free, yummy treats that are perfect for that mid afternoon slump!

  • 225 grams Oats
  • 100 grams Ground Almonds
  • 50 grams Coconut Sugar Or sugar of choice
  • 30 grams Cocoa/Cacao
  • 1 tsp Baking Powder
  • 1 tsp Ground Ginger
  • 1/2 tsp Cinnamon Powder
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 160 grams Maple Syrup
  • 100 grams Dark Chocolate


  1. Preheat oven to gas Mark 4/ 180 C.

  2. Combine oats, ground almonds, sugar, cocoa, ,baking powder, cinnamon and ginger in a large bowl. 

  3. In a separate mixing bowl, whisk together the eggs, maple syrup and vanilla.

  4. Add the wet mixture to the dry and mix until combined.

  5. Line a tray with greaseproof paper. Roll the mixture into balls using your hands and flatten. Place them onto the preened tray 1 inch apart. 

  6. Bake for 8-10 minutes and allow to cook for 5 minutes before transferring to a wire rack. 

  7. Melt the chocolate by breaking into small pieces and add to a heatproof bowl. Add a little boiling water to a saucepan and heat until simmering. Suspend the bowl over the water, making sure the bowl isn't touching the water. Heat until melted.

  8. Once the cookies are cooled, drizzle over some chocolate and enjoy!
