Chicken Souvlaki and Tzatziki

Chicken Souvlaki and Tzatziki - Chicken marinated in greek flavours, threaded onto skewers, served with tzatziki and rolled into a tortilla as a healthy alternative to pitta bread or flat bread.

Ingredients
  

Chicken Souvlaki

  • 4 Chicken Breasts skinless and boneless and cut into 2cm chunks
  • 4 tbsp Olive Oil
  • 1 Lemon Juice of
  • 2-3 small cloves Garlic crushed
  • 2 tbsp dried Oregano
  • 1 tsp Cumin Optional
  • 1 tsp Paprika Optional
  • Salt and Pepper
  • 8 Tortilla Wraps

Tzatziki

  • 1 Cucumber Peeled and seeds removed
  • 2 cloves Garlic crushed
  • 3 tbsp Olive Oil
  • 500g Greek Yoghurt
  • 1 tbsp Red Wine Vinegar
  • Salt to taste

Instructions
 

Chicken

  • Place the chicken and marinade into a bowl and set aside to marinade for at least 2 hours or overnight.
  • Preheat the grill and cook the chicken souvlaki for about 10 - 15 minutes turning occasionally, until nicely coloured on all sides and cooked through. 

Tzatziki

  • Grate the cucumber and sprinkle with salt. Set aside for 10 minutes. Squeeze out the excess water from the cucumbers between tea towels. 
  • Combine all the remaining ingredients for the tzatziki in a small bowl and stir in the cucumber. Set aside.

Wraps

  • Toast the wraps in a dry frying pan for 2 minutes each side (Over a medium/high heat). 

Assemble

  • Add some lettuce leaves and greek salad (see recipe in notes), add the chicken and tzatziki and enjoy!

Notes

  1. Soak the skewers in water. (This will prevent them from burning.) 
Serve with this Greek Salad.You can skip the feta if you wish!
