Simple Roasted Root Vegetables

Simple Roasted Root Vegetables are delicious when roasted and a really fab way to incorporate vegetables into your everyday meals. Especially if you prepare them on meal prep day for the week ahead!

Ingredients

  • 4 Carrots washed, peeled and cut into 1.5 inch chunks
  • 4 Parsnips washed, peeled and cut into 1.5 inch chunks
  • 2 small Turnips washed, peeled and cut into 1.5 inch chunks
  • 1 small Celeriac washed, peeled and cut into 1.5 inch chunks
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 3 cloves Garlic crushed
  • 1 tbsp Honey

Instructions

  1. Preheat oven to Gas Mark 6, 200C/180C fan. 

  2. Combine all the veg with the oil and everything else apart from the honey on a large oven tray with sides. Roast in the oven for 50 minutes.

  3. Remove the tray from the oven, drizzle over the honey and return to the oven for 15 - 25 mins more until golden
