Simple Roasted Root Vegetables
Simple Roasted Root Vegetables are delicious when roasted and a really fab way to incorporate vegetables into your everyday meals. Especially if you prepare them on meal prep day for the week ahead!

4 Carrots washed, peeled and cut into 1.5 inch chunks 4 Parsnips washed, peeled and cut into 1.5 inch chunks 2 small Turnips washed, peeled and cut into 1.5 inch chunks 1 small Celeriac washed, peeled and cut into 1.5 inch chunks 2 tbsp Olive Oil 1/2 tsp Salt 1/4 tsp Black Pepper 3 cloves Garlic crushed 1 tbsp Honey
Preheat oven to Gas Mark 6, 200C/180C fan.
Combine all the veg with the oil and everything else apart from the honey on a large oven tray with sides. Roast in the oven for 50 minutes.
Remove the tray from the oven, drizzle over the honey and return to the oven for 15 - 25 mins more until golden
