Vegan and Gluten Free Ginger Biscuits

Vegan and Gluten Free Ginger Biscuits are a necessity in my house. My kids love ginger biscuits and whilst I would love to always give them the treacle sugar laden type, I can't.

Ingredients
  

  • 200 grams Almond Flour
  • 3 tbsp Maple Syrup
  • 1 tbsp Coconut Sugar
  • 50 grams Coconut Oil melted
  • 1 tbsp Mollasses
  • 1/4 tsp Bicarbonate of Soda
  • Pinch Salt
  • 1 tsp Ginger grated
  • 1/3 tsp Ground Ginger
  • 1/2 tsp Cinnamon

Instructions
 

  • Preheat oven to Gas Mark 4, 180 C.
  • Add all the ingredients to a blender and blend until smooth.
  • Wrap the dough in cling film and leave in the fridge for 10 minutes.
  • Roll the dough out to desired thickness. I prefer thin biscuits - 0.5 cm. (Place some cling film on top of the sough to make this easier.
  • Cut out biscuits using a cutter. I used a 2.5 inch cutter. Place  biscuits on a tray lined with baking paper.
  • Bake for 14-16 minutes until golden brown.
  • Leave to cool for 10 minutes and them pop onto a cooling rack.
