Vegan and Gluten Free Ginger Biscuits
Vegan and Gluten Free Ginger Biscuits are a necessity in my house. My kids love ginger biscuits and whilst I would love to always give them the treacle sugar laden type, I can't.

200 grams Almond Flour 3 tbsp Maple Syrup 1 tbsp Coconut Sugar 50 grams Coconut Oil melted 1 tbsp Mollasses 1/4 tsp Bicarbonate of Soda Pinch Salt 1 tsp Ginger grated 1/3 tsp Ground Ginger 1/2 tsp Cinnamon
Preheat oven to Gas Mark 4, 180 C.
Add all the ingredients to a blender and blend until smooth.
Wrap the dough in cling film and leave in the fridge for 10 minutes.
Roll the dough out to desired thickness. I prefer thin biscuits - 0.5 cm. (Place some cling film on top of the sough to make this easier.
Cut out biscuits using a cutter. I used a 2.5 inch cutter. Place biscuits on a tray lined with baking paper.
Bake for 14-16 minutes until golden brown.
Leave to cool for 10 minutes and them pop onto a cooling rack.
