A delicious, quick and easy italian inspired stuffed chicken breast with sun dried tomato paste and herbs. This is the best stuffed chicken breast ever. Juicy and flavourful and no faffing required.

Ingredients
  

Dressing

  • 1 tbsp 1 tbsp Dijon Mustard
  • 1 tbsp Lemon jJuice
  • 1/2 tsp Honey
  • 2 tsp Olive Oil
  • 2 cloves Garlic crushed
  • 1 tsp Oregano dried
  • 1/4 tsp Parsley dried
  • 1/4 tsp Basil dried
  • 1/2 tsp Red Pepper Flakes
  • Salt and Pepper to taste

Chicken

  • 2 small Chicken Breasts (150g - 180g each) boneless and skinless
  • 110 grams Sun Dried Tomato Paste
  • 6 thin slices Mozzarella
  • Small handful Basil Leaves
  • 1 tbsp Olive Oil

Instructions
 

  • Preheat oven to HGas Mark 4/180 degrees C.
  • Combine the ingredients for the dressing in a small bowl and whisk together.
  • Cut a slit into each chicken breast, taking care not to cut all the way though.
  • Cover the chicken in the dressing (including inside the slit)
  • Stuff chicken with paste and basil leaves.
  • Seal with toothpicks diagonally.
  • Heat oil in ovenproof pan. Add the chicken and cook for 1 1/2 minutes on each side, or until golden.
  • Transfer pan to the oven and cook for 15 minutes, or until  chicken is cooked through. 
  • Drizzle over the juices from the pan and serve!
