One tray chicken, brussel sprouts, carrots and potatoes

I am yet to meet a person who doesn't appreciate a one tray meal once in a while. That is why I have sooooo many one tray recipes coming up. This one tray chicken, brussel sprouts, carrots and potatoes is delicious. Don’t you love recipes that are hands off?

Ingredients
  

Marinade Sauce

  • 8 Chicken Drumsticks
  • 125 ml Lemon Juice
  • 4 cloves Garlic crushed
  • 1 tbsp Dijon Mustard heaped
  • 2 tbsp Honey
  • 2 tsp Paprika
  • 1 tsp Oregano dried
  • 1 tbsp Olive Oil
  • Salt and Pepper

Chicken Bake

  • 250 ml Chicken Stock
  • 4 Medium Potatoes quartered
  • 2 Red Onions quartered
  • 1 large Carrot sliced into rounds
  • 250 grams Brussel Sprouts cut in half
  • 150 g Cherry Tomatoes halved
  • Salt and Pepper

Instructions
 

  • Combine the chicken and marinade ingredients in a ziplock bag or large bowl and set aside for 40 minutes or up to 24 hours. 
  • Preheat oven to gas Mark 4/180 degrees C.
  • Add the chicken and marinade into a oven proof dish, then add the chicken stock, potatoes, sprouts, carrots and onion.
  • Cover with foil and bake for 20 minutes.
  • Remove foil, turn chicken, add tomatoes and sprinkle with paprika and salt and pepper. 
  • Turn oven up to gas Mark 6/200 degrees C and bake for a further 25 - 35 minutes or until potatoes and chicken are cooked.

Notes

Baste chicken midway.
