4Chicken Thighs (Roughly 500g)boneless, skinless cut into bitesize chunks
Marinade
3tbspGreek Yoghurt
1/2Limejuice of
4cloves Garlic crushed
1heaped tspGinger crushed
3tsp Gram Flour
1tbspSmoked Paprika
1 tspKashmiri or other Red Chilli Powder
1/4tspGaram Masala Powder
1 1/2 tspCoriander Powder
1 tspCumin Powder
1/4tspTurmeric
Salt to taste
Other
1-2tbspButtermelted
1/2Lemonjuice of
4Wraps
Salads, Chutneys and Sauces to serve
4Skewerssoaked in water for 30 minutes
Instructions
Marinade the chicken in all the marinade ingredients for a few hours or overnight.
Preheat the grill to medium/high. Thread chicken onto the skewers. Place on wire rack over a tray and cook under the grill for 15 - 20 minutes. Baste regularly.
Serve warm with sauces, salads, chutneys and in a hot wrap!
Notes
The gram flour is important because it helps the marinade stick to the chicken. This is something my mum always does and a tip I also remember reading many many years ago on a blog by a lady called Manisha. I can't remember her surname. :( Please let me know if you know who I am talking about.The marination time is not included in the times for this recipe.
