Kardashian Chicken Salad (Health Nut CopyCat) - The now famous Kardashian salad from Health Nut in Woodlands Hill, Calif is made using shredded chicken, romaine and iceberg lettuce, shredded mozzarella, tomatoes, sprouts, and sunflower seeds.
Place the chicken thighs between 2 pieces of cling film and bash to flatten with a rolling pin. Fill a bowl with warm water. Mix in a pinch of salt. Place your chicken thighs in for 15 minutes. This step is to tenderise the chicken but can be skipped if need be.
Add the butter and oil to a large oven proof pan over medium/high heat. Add chicken, and sear 2 minutes on both sides. Set aside.
In the same pan, add garlic, and cook, stirring until fragrant, about 1-2 minutes. Stir in chicken stock, lemon juice and herbs. Bring to a boil; reduce heat and simmer until the sauce has slightly thickened, about 3-5 minutes. Return chicken to the pan.
Place into oven at Gas Mark 3 and roast for 25-30 minutes.
Combine all the ingredients for the salad in 2 medium sized bowls.
Combine all the ingredients for the pickled ginger in a small bowl and set aside for 15 minutes.
Combine all the ingredients for the dressing in a small bowl and whisk to combine.
Add the chicken, pickled ginger and dressing to the salad and enjoy!
