Kardashian Chicken Salad (Health Nut CopyCat)

Kardashian Chicken Salad (Health Nut CopyCat) - The now famous Kardashian salad from Health Nut in Woodlands Hill, Calif is made using shredded chicken, romaine and iceberg lettuce, shredded mozzarella, tomatoes, sprouts, and sunflower seeds.

Ingredients

Chicken Salad

  • 1/2 tbsp Butter
  • 1/2 tbsp Oil
  • 2 - 3 Chicken Thighs Skin less and Boneless
  • 1 clove Garlic crushed
  • Juice 1/2 Lemon
  • 1 tsp Dried Mixed Herbs
  • 70 ml Chicken Stock

Salad

  • Large Handful Chopped Romaine and Iceberg Lettuce
  • 1 Avocado Sliced finely
  • 1 large Carrot Grated or sliced (I did both)
  • 10 Baby Plum Tomatoes sliced in half
  • 2 small Cucumber sliced
  • 4 tbsp Mozarella shredded
  • 1 tsp Parmesan or Grana Padano shredded
  • 2 tbsp Toasted Mixed Seeds
  • 10 Black Olives

Quick Pickled Ginger

  • 1/2 inch Ginger
  • 1/8 tsp Salt
  • 1/8 tsp Sugar
  • 1/2 tbsp Rice Vinegar
  • 1/4 tsp Water

Easy Italian Dressing

  • 1 Lemon Juice of
  • 1 tbsp Mustard
  • 2 small cloves Garlic crushed
  • 1/2 tsp Mixed Herbs (Dry)
  • 3 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

Chicken

  1. Place the chicken thighs between 2 pieces of cling film and bash to flatten with a rolling pin. Fill a bowl with warm water. Mix in a pinch of salt. Place your chicken thighs in for 15 minutes. This step is to tenderise the chicken but can be skipped if need be.


  2. Add the butter and oil to a large oven proof pan over medium/high heat. Add chicken, and sear 2 minutes on both sides. Set aside.

  3. In the same pan, add garlic, and cook, stirring until fragrant, about 1-2 minutes. Stir in chicken stock, lemon juice and herbs. Bring to a boil; reduce heat and simmer until the sauce has slightly thickened, about 3-5 minutes. Return chicken to the pan.

  4. Place into oven at Gas Mark 3 and roast for 25-30 minutes.

Salad

  1. Combine all the ingredients for the salad in 2 medium sized bowls.

Pickled Ginger

  1. Combine all the ingredients for the pickled ginger in a small bowl and set aside for 15 minutes.

Salad Dressing

  1. Combine all the ingredients for the dressing in a small bowl and whisk to combine.

Assemble

  1. Add the chicken, pickled ginger and dressing to the salad and enjoy!
