Chilli Paneer with Peppers - Indo Chinese food is very popular and this is probably my favourite dish of the lot because I love Paneer and I love Chilli.
Add all the ingredients (except for the lemon juice) for the batter in a small bowl.
Dip the paneer into the batter and set aside.
Heat 2 tbsp oil in a large flat frying pan.
Add the paneer and quickly cover. Fry for 20-30 seconds and then turn and cover again and fry for 20 - 30 seconds.
Drop the paneer into a bowl of water and add a squeeze of lemon juice to the water.
Heat the oil in a pan over medium/high heat, stir in the garlic and ginger and cook for about 1 minute.
Add the pepper and chilli and cook for 2 minutes.
Stir in the sauces, brown sugar and salt. Turn the heat right down and cook for about 3- 5 minutes or until thickened.
Add the paneer to the sauce and cook for 2 minutes. Garnish with spring onions and serve.
You may need to add some cornflour (1 tsp) mixed in 1 tbsp water to the sauce if it isn't thickening.
