Feta and Avocado Salad

Feta and Avocado Salad - Quick, easy and simple. This delicious salad is great on its own, as a side or as a 'bed' for meats, beans or chickpeas.

Ingredients
  

  • 200 grams Cherry or Baby Plum tomatoes Chopped in half
  • 1 Cucumber Deseeded and cut into half moons
  • 1 Avocado Cut into chunks
  • 1/2 Red Onion Sliced Finely
  • Quarter Handful Parsley Leaves Chopped extra finely
  • 100 grams Feta Cheese Crumbled
  • 2 tbsp Olive Oil
  • 1 tbsp Red Wine Vinegar
  • 1 Squeeze Lemon Juice
  • 1 tsp Red Oregano
  • Salt and Pepper

Instructions
 

  • Combine the tomatoes, cucumber, avocado, red onion and parsley in a large bowl. 
  • Whisk together the olive oil, red wine vinegar, lemon juice, oregano and seasoning and pour over salad.
  • Mix through gently and serve immediately.
