Feta and Avocado Salad
Feta and Avocado Salad - Quick, easy and simple. This delicious salad is great on its own, as a side or as a 'bed' for meats, beans or chickpeas.

- 200 grams Cherry or Baby Plum tomatoes Chopped in half
- 1 Cucumber Deseeded and cut into half moons
- 1 Avocado Cut into chunks
- 1/2 Red Onion Sliced Finely
- Quarter Handful Parsley Leaves Chopped extra finely
- 100 grams Feta Cheese Crumbled
- 2 tbsp Olive Oil
- 1 tbsp Red Wine Vinegar
- 1 Squeeze Lemon Juice
- 1 tsp Red Oregano
- Salt and Pepper
Combine the tomatoes, cucumber, avocado, red onion and parsley in a large bowl.
Whisk together the olive oil, red wine vinegar, lemon juice, oregano and seasoning and pour over salad.
Mix through gently and serve immediately.
