Mediterranean Chicken and Chickpea Traybake - Chicken thighs and legs cooked in mediterranean flavours, on a bed (what?!!!) of chickpeas.

Ingredients
  

  • 8 Chicken Thighs and Legs Skinless and Cleaned
  • 400 ml Yoghurt
  • Salt and Pepper
  • Juice 1 Lemon
  • 2 tsp Cumin Powder
  • 1 tsp Thyme
  • 1 tsp Oregano
  • 1 tsp Smoked Paprika
  • 2 tsp Garlic Powder
  • 2 tbsp Olive Oil
  • 1 Red Onion Peeled and sliced finely
  • 1 400g tin Chickpeas

Instructions
 

  • Marinade the chicken thighs and legs in the yoghurt, Salt and Pepper, Lemon, Cumin Powder, Thyme, Oregano, Smoked Paprika and Garlic Powder, for 30 minutes to 4 hours.
  • Add the red onion slices to a tray, season and drizzle over the olive oil.
  • Arrange the chicken and chickpeas over the onion slices.
  • Preheat oven to Gas Mark 6, 200 degrees C. Bake uncovered for 40-45 minutes. Sprinkle over a little chopped parsley if you like!
