Preheat oven to gas Mark 4/ 180 C.
Combine oats, ground almonds, sugar, cocoa, ,baking powder, cinnamon and ginger in a large bowl.
In a separate mixing bowl, whisk together the eggs, maple syrup and vanilla.
Add the wet mixture to the dry and mix until combined.
Line a tray with greaseproof paper. Roll the mixture into balls using your hands and flatten. Place them onto the preened tray 1 inch apart.
Bake for 8-10 minutes and allow to cook for 5 minutes before transferring to a wire rack.
Melt the chocolate by breaking into small pieces and add to a heatproof bowl. Add a little boiling water to a saucepan and heat until simmering. Suspend the bowl over the water, making sure the bowl isn't touching the water. Heat until melted.
Once the cookies are cooled, drizzle over some chocolate and enjoy!
