Chicken shawarma bowl

Healthy Homemade Chicken shawarma bowl -  Featuring smoky chicken marinated in a load of middle eastern spices, a dollop of hummus (because I am obsessed and it would be wrong not to), a bed of quinoa, plenty of pickles and some veg!  Basically this is a healthy & easy weeknight dinner and it also happens to be perfect for meal prep!

Ingredients
  

Chicken

  • 1 1/2 lb Boneless, skinless chicken breasts
  • 1/2 Lemon Juice of
  • 3 clvoes Garlic crushed
  • 2 tsp Cumin Powder
  • 1/4 tsp Cardamom
  • 1 tsp Smoked Paprika
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tsp Olive Oil

Hummus

  • 100 grams Hummus

Quinoa

  • 1 cup Quinoa Cooked according to pack instructions (replace water with stock)

Salads and Pickles

  • Salads and Pickles of choice, Feta etc

Dressing

  • 100 grams Plain Yoghurt
  • 2 tbsp Dill leaves Chopped finely
  • 1/4 tsp Dried Mint Leaves
  • 2 cloves Garlic Crushed
  • 1 tbsp Lemon Juice
  • 1 tbsp Tahini
  • Pinch Salt

Instructions
 

  • Marinade the chicken in all the ingredients - overnight or up to 30 minutes. Preheat griddle pan or grill, then add the chicken, cooking for 5-6 minutes each side. Transfer the chicken to a cutting board to rest for a minute or two, then thinly slice.
  • Add quinoa to a bowl, then add a large spoonful of hummus, pickles, salad vegetables and the grilled chicken. Drizzle with the dressing and enjoy!
