Mediterranean Quinoa Salad

Mediterranean Quinoa Salad - This healthy Mediterranean Quinoa Salad is a hearty salad that is loaded with quinoa, green peppers, tomatoes and feta tossed in a healthy mediterranean salad dressing. It is similar to one of my fave greek salads but just with quinoa.

Ingredients
  

Salad

  • 170 g Quinoa cooked in veg or chicken stock
  • 200 g Baby Plum Tomatoes diced
  • 1/2 large Cucumber diced (you can remove the seeds if you prefer)
  • 90 g Kalamata Olives chopped in half
  • 1/2 small Red Onion sliced
  • 1/2 Green Pepper diced
  • 100 g Feta crumbled

Dressing

  • 3 tbsp Olive Oil
  • 2 tbsp Red Wine Vinegar
  • 1 tsp Dried Oregano

Additional Ingredients

  • Salt and Pepper

Instructions
 

  • In a large bowl, combine quinoa, tomatoes, cucumber, kalamata olives, red onion, green pepper and feta cheese.
  • To make the dressing, whisk together olive oil, red wine vinegar, and oregano in a small bowl. 
  • Pour dressing over the salad and stir until combined. Season with salt and pepper to taste.
