Indian Spiced Yoghurt Whole Roast Cauliflower -A show stopping vegetarian recipe. Blanched Cauliflower, slow roasted in an indian spicy yoghurt marinade.

Ingredients
  

  • 1 Cauliflower Leaves and rough stem removed
  • 2 tbsp Ghee
  • 2 tbsp Oil
  • 1 Onion Sliced
  • 1 tbsp Garlic Paste or 4 cloves Garlic crushed
  • 2 tbsp Ginger Paste or 1 inch Ginger crushed
  • 1 tsp Sugar
  • 500 ml Natural Yoghurt
  • 1 tbsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1/2 tsp Red Chilli Powder
  • 1/2 tsp Turmeric Powder
  • 1 tsp Madras Curry Powder of Garam Masala
  • 1 tsp Salt

Instructions
 

  • Preheat oven to Gas Mark 4/180 C.
  • Preheat oven to 180 C/Gas Mark 4.Cook the cauliflower in a pot of boiling water until just tender - 8 mins and drain well.
  • Heat oil  and ghee, saute onions for 8 - 10 minutes until golden brown.Stir in ginger/garlic and saute for 2 more minutes.
  • Blend along with sugar, yoghurt and spices to form a paste.
  • Baste over Cauliflower and roast for 20-25 mins, basting with the cauliflower juices halfway through, until golden.
  • Pop under the grill for 3 - 4 minutes to brown before serving with a squeeze of lemon juice.

Notes

Feel free to adjust the spices according to your taste.
