Indian Vegetarian Quinoa Pilau - I grew up eating several different variations of pilau but after over indulging over the last couple of days I decided to make a version using quinoa.
In a pan, heat the oil and ghee. Stir in the cumin seeds, bay leaf, cardamom and cinnamon stick. Once they begin to splutter, add the onions and cook for 7 - 10 minutes until a deep golden colour.
Stir in the ginger, garlic and green chilli. Cook for 2 - 3 minutes before adding the mixed vegetables. Add the turmeric, chilli, coriander powder and cook for a couple of minutes.
Pour in the stock and add the quinoa, then bring to a simmer. Turn the heat down and cover the pan. Add the curry powder and garam masala and stir thoroughly. Cook for 15 - 17 minutes. Remove from the heat and fluff with a fork.
