Chai Apple and Yoghurt Granola Parfait – A creamy, decadent, breakfast or dessert with all the delicious flavors of an apple crumble!

- 25 g Butter
- 2 Apples peeled and cored and thinly sliced
- 1 tsp Cornflour
- 75 ml Water
- 40 g Brown Sugar or Coconut Sugar
- 1/2 tsp Cinnamon
- 1/2 tsp Ginger Powder
- 1/4 tsp Cardamom Powder
- 1/8 tsp Nutmeg
- 1/8 tsp Black Pepper
- 1 tsp Lemon Juice
- 250 ml Yoghurt
- 4 tbsp Granola
In a large pan over medium high heat, melt the butter and add the apples. Cook stirring continuously until tender. (6 - 7 minutes).
Add the cornflour to the water in a small bowl and mix. Pour into the pan.
Now add the sugar, cinnamon, ginger, cardamom, nutmeg, black pepper and lemon juice. Bring to the boil and simmer for 2 minutes.
Allow to cool slightly, about 5 minutes. Spoon alternating layers of the caramelised apples, yogurt and granola into 4 glasses.
