Mixed grain and veg salad

This Mixed grain and veg salad is filling, refreshing, crisp and delicious. It’s made simply with chopped vegetables, a simple dressing and 2 pouches of Merchant Gourmet products.

Ingredients

Salad

  • 250 g Merchant Gourmet Red and White Quinoa Prepare according to pack instructions
  • 100 g Merchant Gourmet Glorious Grains with Red Rice & Quinoa Prepare according to pack instructions
  • 1 Red Pepper seeded and diced
  • 1 Yellow Pepper seeded and diced
  • 2 Spring Onions sliced finely
  • 1 tbsp Jalapeno slices diced
  • 10 Baby Plum tomatoes diced
  • 150 g Sweetcorn kernels
  • 1 small Red Onion sliced finely
  • 1/4 Cucumber deseeded and diced

Dressing

  • 4 tbsp Olive Oil
  • 1 large Lemon Juice and zest of
  • 2 Limes Juice of
  • 1 clove Garlic crushed
  • 1/2 tsp Red Chilli Flakes
  • 1 tsp Cumin
  • 1 tbsp Honey
  • Salt and Pepper

Instructions

  1. Add all the ingredients for the salad in a large bowl.

  2. Add all the ingredients for the dressing in a small bowl and whisk together to combine. 

  3. Pour over the salad in the large bowl and toss together to combine.

Recipe Notes

Toasted flaked almonds or pine nuts would work really well with this salad as would a little feta and some pomegranate.
