Garlic Chicken

Very garlicky roast chicken that takes very little effort to make.

Ingredients
  

  • 8 chicken thighs skin on
  • Salt to taste
  • Pepper
  • 2 gtbsp butter melted
  • 2 tbsp oil
  • 2 Bulbs Garlic divided but unpeeled
  • 50 ml Chicken Stock

Instructions
 

  • Preheat the oven to gas mark 6/200 C.
  • Season the chicken liberally with salt and pepper. Slash the chicken 2 to 3 times
  • In a small non stick pan add the oil, and butter.
  • Add the chicken and sear for 3 minutes each side. Remove from the pan and set aside.
  • In a large oven tray, arrange the chickenm garlic and pour in the stock.
  • Cover with foil. Bake in the oven for around 1 hour or until juices run clear when a fork is inserting into the thickest part of the chicken.

Notes

Other flavourings can be added and rubbed into the chicken before searing. Good options are Cayenne Pepper, Paprika, Cumin.
