    Baked Chicken and Sweet Potato Gratin

    Baked Chicken and Sweet Potato Gratin - This juicy baked chicken with sweet potato gratin is absolutely delicious. It is one of our favourite dinners!

    Its all made in one dish which is pretty awesome if you ask me. I do sear the chicken separately first because once you do that, chicken never quite tastes the same without that extra browning. Oh and because the chicken is sat on the potatoes, the juices from the perfectly seasoned chicken flavour the potatoes beautifully making the best main and side in one ever!

    I love the colour and flavour of this chicken. It looks rather pretty on my dinner table/floor situation. As always, this is a quick and easy meal to put together. Obviously you need to slice the potatoes realllllly thin. No thicker then 1/8 inch.  That way they will be cooked at the same time as the chicken. This is simple rustic chicken. 

    What we’re doing here is pretty simple. Basically we are using simple, delicious ingredients and really getting some flavour into them. In this recipe, I used bone in chicken drumsticks or legs (Whatever you prefer to call them).  You can use chicken breast but personally I wouldn't..it wont be as juicy and will compromise the flavour of the potatoes too.  You will have to add the chicken breast towards the end of the cooking time because they don't need as long. 

    By the way guys, I realise I have been away for a while. My Aussie Flu departed just over a day ago and I put some draft posts together yesterday. Unfortunately I wasn't able to get them up because I was at the kids school in the morning and then just didn't have enough time between catching up with laundry/bins/changing bedding etc etc to start thinking about putting posts up but I promise to make it up to you! LOADS of posts coming over the next few days!

    Baked Chicken and Sweet Potato Gratin

    Ingredients

    Chicken

    • 9 Chicken Drumsticks Skin Off, Bone In
    • 1 tbsp Olive Oil
    • 1 tbsp Soy Sauce
    • 1 tbsp Mustard
    • 2 cloves Garlic Crushed
    • 1 tsp Smoked Paprika
    • 1 tsp Onion Powder
    • 2 tsp Mixed Herbs
    • 1 tsp Cumin Powder
    • Salt and Pepper
    • 1 tbsp Olive Oil

    Sweet Potato

    • 2 lb Sweet Potatoes peeled and sliced into 1/8 inch slices 6 medium sized
    • 300 ml Milk of choice I use Almond
    • 100 ml Chicken Stock
    • 1 tbsp Plain Flour
    • 1 Onion Peeled and diced
    • 5 cloves Garlic crushed
    • Salt and Pepper
    • 60 g Mozzarella Grated
    • 3 tbsp Parmesan/Grana Padano

    Instructions

    1. Preheat oven to Gas Mark 6/200 degrees C.

    2. Marinade the chicken in all the ingredients under the chicken list.

    3. Heat the oil in a large pan, over medium high heat and add the chicken. Brown on each side for 2-3 minutes. Remove the chicken and marinade leaving about 2 tbsp marinade in the pan. Set aside.

    4. Stir flour into the pan and whisk in. Add the onions and cook over a low heat for 3-4 minutes.

    5. Pour in the milk, stock, garlic and salt and pepper.  Bring to the boil, then simmer for 5 minutes or until thickened. Add the sweet potato slices, mix in  and remove from the heat.

    6. Grease a large casserole dish (9 x13) with butter. Add half the Sweet potato mixture to the bottom of the dish, then add half of each cheese. Add another layer of sweet potato and cheese. Then top with the chicken and marinade.

    7. Cover with foil and bake for 40 minutes covered. Remove foil and bake for a further 10 minutes uncovered.
