Chai Apple and Yoghurt Granola Parfait – A creamy, decadent, no-bake dessert with all the delicious flavors of an apple pie, without the fuss! It is also great as a breakfast too.
This right here is an easy sell. Me telling my kids that I have an apple yoghurt parfait ready for them at breakfast is always a winner. It is always a statement that is well received. Funny that. Plus some mornings, a grab and go breakfast is everything. Getting the kids up and ready for school is a mission as it is. To then think about breakfast is another hurdle. I know it takes a while to make but it is an easy breakfast to make.
It also happens to make a great afternoon or post school snack. I guess that the simplicity in making it, makes it a great option for any time of the day. The recipe is made with yogurt, chai spiced apples and granola. Usually I would layer these a lot but these cups are very very narrow and whilst it may look like there is a lot of yoghurt to fruit and granola, that actually isn’t the case!
As much as i associate apple crumble and apple pie with Autumn, I also associate it with any of the colder months because of the warming spices and this feels like a wholesome version of either of them. This recipe came about as a deliciously satisfying wholesome alternative to apple pie when I was craving it one day. I use the flavours of apple pie which happen to be the the same as any chai based dessert too and I layer it with healthier ingredients.
Its my daughters birthday today and I cannot believe she is actually 6 years old. She is going to be having all her cousins over later on. It isn’t really a party, just a gathering of mini people and she is beyond excited.
Anyway, Parfait always makes me think about Donkey in Shrek. Specifically this scene.

Chai Apple and Yoghurt Granola Parfait
Chai Apple and Yoghurt Granola Parfait – A creamy, decadent, breakfast or dessert with all the delicious flavors of an apple crumble!
- 25 g Butter
- 2 Apples peeled and cored and thinly sliced
- 1 tsp Cornflour
- 75 ml Water
- 40 g Brown Sugar or Coconut Sugar
- 1/2 tsp Cinnamon
- 1/2 tsp Ginger Powder
- 1/4 tsp Cardamom Powder
- 1/8 tsp Nutmeg
- 1/8 tsp Black Pepper
- 1 tsp Lemon Juice
- 250 ml Yoghurt
- 4 tbsp Granola
In a large pan over medium high heat, melt the butter and add the apples. Cook stirring continuously until tender. (6 - 7 minutes).
Add the cornflour to the water in a small bowl and mix. Pour into the pan.
Now add the sugar, cinnamon, ginger, cardamom, nutmeg, black pepper and lemon juice. Bring to the boil and simmer for 2 minutes.
Allow to cool slightly, about 5 minutes. Spoon alternating layers of the caramelised apples, yogurt and granola into 4 glasses.
