I love me some chicken and courgetti soup when the weather is a little in-between like today..Quick and easy to make and delicious too!
It was freeeeeezing this morning. So glad it has warmed up because I want to hold onto Summer as long as I can..that’s where this Chicken and Courgette Soup comes in.
Are we really in September?? HOW?! That has flown by huh. This month is the month of my little boys birthday and also the month I got married in. My nephews birthday too. Oldest one!
In terms of marriage..The years have really flown by. It feels like we have been married half the time that we have and I actually cannot believe my boy is going to be 7 years old on Sunday. My little baby is growing up so fast!
Shall we talk food now? I think I should…One thing you can guarantee with me is that as soon as its cold around here, I start making soups and loads of it. Said soups will always include heating ingredients like ginger because the cold really gets to my knees and ginger keeps my knee knocking at bay. This Chicken and Courgette Soup has plenty of ginger in it for precisely that reason.
I am really really thinking once again about going on a detox cleanse as of next week for one week. So I would be living off organic vegetables and beans/dahls. Obviously in some sort of delicious cooked format. Raw veganism is never ever going to happen for me because I need hot food. I applaud anyone that can do it though. For my vegetarian week, I’m thinking soups, patties, salads, dahls etc.
Seriously I can’t stop talking some days..it’s like blah, blah, blah!
This Chicken and Courgetti Soup will be on the menu next week, minus the chicken. It’s delicious and I will bulk it out with beans and vegetable because they add incredible flavour and work really well here. The stock will be vegetable too.
Oh btw you really have to try this soup. As well as being yummy, it is easy to prepare and therefore perfect for week days!
Chicken and Courgetti Soup
I love me some chicken and courgette soup when the weather is a little in-between like today..Quick and easy to make and delicious too!
- 2 tbsp Oil
- 1 Onion diced
- 3 cloves Garlic crushed
- 1 inch Ginger finely grated
- 4 small Carrots Peeled and diced
- 1 litre Chicken Stock
- 3 Courgette Spiralised
- 350 grams Chicken Breast cooked and shredded
- 1 tsp Dried Thyme
- 1/2 tsp Chilli Flakes
- 2 Spring Onions sliced finely
- 1-2 tbsp Sesame Seeds
- Salt and Pepper
In a large pot over medium low heat add the oil and onion. Cook for 6 - 7 minutes or until the onions are golden.
Add the garlic and ginger, stirring often. Cook for 2 - 3 minutes. Add the carrots and saute for a further 3 minutes.
Pour in the stock, bring to a simmer, then add the chicken and the courgetti, as well as the thyme and chilli flakes.
Season to taste. Serve the soup in bowls and sprinkle with spring onions and sesame seeds.
