If you are looking for the perfect side salad, this chopped feta salad is it. It is also great as a main paired with a casserole or a meat dish.
Salads that feature ingredients like the ones in this salad (cucumber and red onions that is) are classic and central to many dinner tables around the world. We grew up with kachumbur and there are so many similar but slightly different variations of that all over the internet/world because the flavours just work. They are light, refreshing flavours that lend themselves well to most cuisines as well as being a nutritional powerhouse.
As for the feta, the flavour and texture of feta varies widely. For example danish feta is creamy but not salty or strong. It lends itself well to desserts or any dish where a creamy texture is needed but the tang/salt that is usually expected from feta isn't needed. In this salad I think some of the tang is necessary. I use a nice in-between from M & S which i just love.
I hope you are all well and I am so grateful for all the interaction that is happening in my insta stories at the moment. I seem to be having some deeeeeep chats with some of you in there. It's always quieter on my feed, mainly because instagram changes so much that I always feel like I am finding my feet with it again every 2 weeks. My course is coming to an end soon so my energy is focussed on that and my health but I will be back all over that grid again real soon!
I hope you enjoy this recipe. As basic as it is, it is just a handy recipe to have in your 'back pocket'.
