    Crispy Cauliflower Salad

    Crispy Cauliflower Salad - A vegetarian salad with cauliflower, roasted spiced chickpeas and a quick yummy dressing.

    Ok my instagram post about this salad may have cause some confusion. My bad! I said something along the lines of my expectation was that cauliflower in a salad would never work. However I had no doubts about the versatility of cauliflower having made rice, pizza and sauces. See, I have watched the cauliflower trend from the sidelines for many a year and whilst I have tried everything else, I have struggled with the idea of cauliflower in a salad so until erm..last week I had stayed away but now here i am telling you that you simply must try cauliflower in a salad. It is so good! I may have made it several times last week just to check that it does really work. 

    Here's the thing. Autumn/Winter is all about stews, roasts and soups and whilst they are delicious and have their place, sometimes I need a salad! I need something a little lighter and when that looks like this crunchy, toasty, nutritious bowl of yumminess, I am all over it. I love this salad as a meal or a side.

    This takes the humble cauliflower to a whole new level. Delicious roasted  caramelised cauliflower and the crunchy chickpeas go so well together. There is a real depth to this salad. It makes the perfect healthy, weeknight meal.

    This is a quick and easy recipe that also happens to be plant based and gluten free. It is also very satisfying and can be made ahead! WOOOO!

    The flavours in this salad are:

    Deep and Smoky
    Subtly Spicy
    A little bit Savoury

    Sorry to change the topic but WOAH that went fast! It's time to get the kids up for school. I am pretty sure I have been up an hour but it just flew by! Heading towards the land of uniforms, breakfast making, sibling rivalry, repeated instructions and rushing out of the door. I really miss them when they are at school to be honest because I am so used to having them around but this way I get to have some time to look after myself too.

    Anyway here is the recipe for that salad!

    Crispy Cauliflower Salad

    Prep Time 5 minutes
    Cook Time 35 minutes
    Total Time 40 minutes
    Servings 4

    Ingredients

    Cauliflower, Chickpeas and Onions

    • 1 small Cauliflower
    • 1/2 Red Onion Sliced finely
    • 400 g Tin Chickpeas drained
    • 3 tbsp Olive Oil
    • Salt and Pepper to taste
    • 2 Cloves Garlic crushed
    • 2 tsp Smoked Paprika
    • 1/4 tsp Cayenne
    • Small bunch parsley

    Dressing

    • 1 Clove Garlic crushed
    • 1/4 tsp Cayenne Pepper
    • 1 tbsp Mustard
    • 1 tbsp Honey
    • 3 tbsp Olive Oil
    • 3 tbsp Water
    • Juice and zest of one Lemon
    • Salt and Pepper to taste

    Instructions

    1. Preheat the oven to Gas Mark 6.
    2. Chop the cauliflower into small fine florets and place them on a large oven tray. Add the onions and chickpeas to the same tray.
    3. Drizzle with olive oil and season with salt and pepper. Add the garlic, smoked paprika and cayenne and toss the cauliflower, onions and chickpeas until coated evenly.
    4. Roast in the preheated oven for 20 minutes, then stir, return them to the oven, and roast for an additional 10-15 minutes.
    5. Roughly chop the parsley and set aside.
    6. Combine the ingredients for the dressing in a small bowl and whisk to combine.
    7. Assemble the salad by combining the cauliflower, chickpeas and onion in a bowl. Drizzle with dressing and top with parsley.
