    Cumin Cauliflower Rice and Creamy Aubergine - More veggie goodness in the way of my favourite vegetable in a creamy sauce and a lighter alternative to jeera rice.  Vegan, Pegan, Vegetarian , Gluten Free, Paleo and Keto Friendly.

    Deliciously creamy and easy to prepare, this aubergine curry makes a perfect plant based comfort dish. It’s also naturally vegan and gluten free. The jeera Cauliflower rice compliments it perfectly.

    I would normally only ever eat aubergine with roti but on this occasion I tried it with cauliflower rice and it worked perfectly. Talking of roti, I have been banging on about bringing you some gluten free recipes for roti but haven't got round to it yet. I have about 6 coming up and 2 more recipes to try before I can upload them all in one go. I know that this has been something that I have been talking about for a couple of years.. No excuses. So sorry guys!

    On to this recipe. When I’m looking for a quick dinner idea that leaves me full and satisfied, I always opt for a curry. I mean..I'm indian so it was always going to be that way. Any curry is perfect to feed a hungry crowd. It is also forgiving in that you can get away with chopping and changing it as you see fit. You can also make it in advance, double the quantities and freeze it. 

    Btw I feel like today has been the longest day. I have all the symptoms of a cold and desperately want to retire to bed. Everything is running late. The kids have been super duper cranky too...It's just been one of those days. but I can smell the chicken roasting in the oven and it fills me with joy to know that there is an effortless meal cooking away in the kitchen whilst I am getting my work done. I know that once the chicken is out of the oven, order will be restored and life will be great again. Wishful thinking? Maybe but that's my kind of Disney movie.

    Cumin Cauliflower Rice and Creamy Aubergine

    Cumin Cauliflower Rice and Creamy Aubergine - More veggie goodness in the way of my favourite vegetable in a creamy sauce and a lighter alternative to jeera rice.

    Ingredients

    Creamy Aubergine Curry

    • 4 tbsp Oil
    • 1 large Aubergines Cut into 3/4 inch cubes
    • 1 tsp Cumin Seeds
    • 1 tbsp Ghee
    • 5 cloves Garlic crushed or chopped finely
    • 2 large Onions chopped finely
    • 1 tbsp Kasoori Methi
    • 40 g Fresh Dill chopped
    • 2 Green Chilles finely chopped
    • 2 Vine Tomatoes chopped
    • 2 tsp Coriander Powder
    • 1 tsp Turmeric Powder
    • Salt
    • 240 g Coconut Cream

    Cumin Cauliflower Rice

    • 1 medium Cauliflower chopped and grated/blended till rice like size
    • 1 tbsp Oil
    • 1 tsp Ghee
    • 1 tsp Cumin Seeds
    • 2 dried Kashmiri Chillies broken
    • 1 clove Garlic finely sliced
    • 1/2 - 1 tsp Salt

    Instructions

    Creamy Aubergine Curry

    1. Heat the oil in a large pan add add the cumin seeds and aubergine. Shallow fry until par cooked. Around 15 minutes.

    2. In the same pan, odd the ghee and the garlic. Brown for 2 minutes before stirring in the onions. Cook the onions for 10 minutes or until golden brown.

    3. Now add the kasoori methi, green chillies, tomatoes, dill. Cook for 2 - 3 minutes on medium high heat.

    4. Stir in the Coriander Powder,  Turmeric Powder and Salt.

    5. When the oil begins to separate from the mixture (around 10 minutes), add the coconut cream and cook on low for 3 - 4 minutes.  

    6. Add the aubergines and cook for 5 minutes on low heat, stirring occasionally.

    Cauliflower Rice

    1. Heat the oil in a large pot. then add the ghee. Add the cumin seeds and chillies. Stir for 30 seconds before adding the garlic and salt.

    2. Stir in the cauli rice and stir-fry for about 3-4 minutes over a medium heat. 

    Recipe Notes

    The oil may seem excessive. However once the aubergines are done cooking, they release that oil back into the pan and it can be removed.
