    If you have followed me for a while, you know that my son’s favourite meal is Mac and Cheese and we have tried many a variation over the years.

    In this Recipe, we use a blend of lots of Cheese for a rich, creamy Macaroni dish that is so delicious and comforting with a gorgeous bubbling crispy top.

    I make a large batch of this because not only does my son love Mac and Cheese, he has managed to get his friends hooked on it too.

    Often when we have had Mac and Cheese in a restaurant it has been bland, flavourless and dry so when we tried this one, we were obsessed.

    For me I love the irresistible flavour and deliciousness but for my son it is only about the flavour.

    What makes Chick-Fil-A mac and cheese so special

    Not only is the flavour incredible, the texture and mouthfeel is pretty special too.

    The blend of cheese includes - Montery Jack, Parmesan, Pecorino and Cheddar.

    In the UK some of these Cheese’s aren’t readily available so I had to do a bit of research, tasting and testing to make sure this tasted as good as the one we tasted.

    Ingredients Needed

    This is a simple enough recipe. Here is what you need to make it:

    Monterey Jack Cheese – Or use Mature Cheddar.

    Parmesan and Pecorino - or Grana Padana.

    Cheddar - Mature is lovely here. You can also use Red Leicester.

    Double/HeavyCream and Milk – this helps give you a rich sauce, and it also helps in reheating.

    Macaroni - or any small Pasta shape.

    Butter - To make the Sauce.

    How to Make the Easiest and BEST Chick-Fil-A Mac and Cheese

    Cook pasta according to pack instructions.

    Make the Cheese Sauce - Add Milk and Cream to a pot and heat on low heat.

    Stir in Butter and Montery Jack Cheese.

    Add most of the Cheddar Cheese, Pecorino and Parmesan to the sauce and mix through.

    Whisk until the Cheese has melted.

    Add the Macaroni to the Sauce.

    Add the Macaroni and Cheese to a large dish.

    Grate over the remaining Cheddar Cheese.

    Place the dish under grill/broiler and cook until the top turn golden brown.

    Tips for making this Recipe

    Buy the Cheese in a block

    Pre Shredded Cheese usually has a coating which stops it from clumping together. This affects how it melts.

    Type of Cheese

    Use your favourite Cheese here. I love to use a combination of cheeses.

    Variations

    Add Protein – Stir in your favourite cooked protein at the end, such as Chicken, Ground Lamb, Prawns.

    Mustard - Adds so much flavour!

    Seasonings – Add spices or seasonings of your choice.

    Sauces – Stir in some Hot Sauce or Chilli Oil at the end.

    Breadcrumbs – Add a sprinkling on top along with the cheese before baking, for extra crunch.

    How to Store Leftover Mac and Cheese

    Store leftovers in an airtight container in the fridge for up to five days.

    You can also freeze it in an airtight container for up to three months.

    How to Reheat

    You can reheat this mac and cheese in the microwave for a couple of minutes.

    Alternatively, you can reheat it in the oven by covering the dish with foil and warming at 180 C/ 350 F/Gas Mark 4 until it has warmed through.

    Ingredients

    • 225 g Macaroni
    • 250 ml Milk
    • 150 ml Double Cream Heavy Cream
    • 1 tbsp Butter
    • 115 g Montery Jack I used Slices, torn/shredded, Or use Mature Cheddar
    • 450 g Mature Cheddar Shredded
    • 3 tbsp Pecorino Cheese Grated
    • 2 tbsp Parmesan or Grana Padano, Grated

    Instructions

    1. Cook Macaroni according to package instructions then drain.

    2. Make the Cheese Sauce - Add Milk and Cream to a pot and heat on low heat.

    3. Stir in Butter and Montery Jack Cheese.

    4. Add 375g Mature Cheddar, Pecorino and Parmesan. Stir to combine.

    5. Let the sauce sit for 5 minutes.

    6. Add Pasta to sauce and mix through.

    7. Decant into a 9 x 13 inch Dish.

    8. Add remaining Mature Cheddar on top. Place under the Grill/Broiler for 2 - 4 minutes until golden brown on top.
