Roast Chicken dinners are a favourite at this time of year in our home. The kids and the adults (basically me and hubby) chomp away enthusiastically and funnily enough the kids are silent..for once. Bliss!
I have been meaning to get slow cooker, instant pot and meal prep recipes up for some time now. The latter has been requested a few times and I will be putting something together soon.
About this chicken..A chicken cooked in a slow cooker can be ready to eat in around 5 hours but to get it really crispy? You need to cook it just a little longer (ok 3 hours) and you also need to prop it up onto some rolled up balls of thick foil before you begin to cook it. This is all after cleaning and marinading of course. You then lay the chicken on top of the foil and cook. Simple as that.
By the way, I have kept the marinade really simple for this chicken because the point of the recipe is exactly that..simplicity.

Easy Peasy Slow Cooker Roast Chicken - Copycat Rotisserie Style Chicken made in the slow cooker with super crispy skin!
Ingredients
- 1 2 Kg Chicken Skin On
- 2 tbsp Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 1/2 tsp Dried Thyme
- 2 tsp Paprika
- 1.5 tsp Salt
- 1/2 tsp Ground Black Pepper
Instructions

Remove Giblets and clean the inside of the chicken and pat it completely dry inside and out.

Truss the chicken if desired.

Brush the outside of chicken with olive oil.

Combine the garlic powder, onion powder, dried thyme, paprika, salt and pepper in a small bowl. Rub the spice mixture all over the outside of the chicken.

Roll up some pieces of foil into thick balls and add to the bottom of your slow cooker.

Place the chicken on top of the foil. Cook on low 8 hours.
