    Fig, Stem ginger and Dark chocolate energy bites

    These fig, stem ginger and dark chocolate energy bites or 'bliss balls' are a delicious and instant pick me up. Figs are sweet. The flesh is smooth and chewy and the seeds are crunchy.

    Some of the health benefits of figs include, it aids in reducing cholesterol and prevents high blood pressure. Consuming figs can also reduce fatigue and prevent anaemia. Eating figs was recommended to me by my doctor for the last couple of reasons when he noticed i looked pale and exhausted on an unrelated visit.
     
    Combing the figs with stem ginger syrup and dark chocolate makes this feel like a naughty treat when in fact it is quite a healthy bite size snack. There is also peanut butter, oats and chia seeds in here but i thought that would make the title really long.
     
    We returned home from my mum's last night. I quite enjoyed the whole camping vibe that was going on whilst the kitchen is getting done. We set off at 12 in the afternoon and got home at 11 at night. We were cream crackered (also known as knackered). We made some detours obvs but not as many as we needed to because we were so exhausted.
     
    Our last stop before returning home was to see the adorable new baby in the family. What is it about new babies? They just have an ability to melt your heart and make you forget everything. It was nice to end the night that way because we had spent what felt like a decade in Ikea just prior to that. I know everyone loves Ikea, but i would say i'm a reluctant semi fan. I feel like I'm in a never ending maze that i have to get to the end of. It's so much information to take in. The only thing worse then being in Ikea with two kids, is going in with a pram when it's busy and you can't stop/turn back/reverse. Tell me at least one of you has experienced a busy Ikea with a pram? The only reason i put up with Ikea is because it's awesome in every other way!
     
    Anyway, it's nice to be home. As much as i love being away, i love coming home too.
     
    Anyhow, i could have done with these energy bites yesterday because by the end of yesterday i was ready to fall asleep whilst standing. The Figs I use are partially rehydrated and I get them from the baking section in Tesco.

    Fig, Stem ginger and Dark chocolate energy bites

    Prep Time 5 minutes
    Servings 16 - 20

    Ingredients

    • 200 g partially rehydrated figs
    • 3 tbsp peanut butter or almond butter
    • 1 tbsp stem ginger syrup From a jar of stem ginger
    • 35 g dark chocolate grated
    • 1 tbsp chia seeds
    • 60 g oats

    Instructions

    1. Add all the ingredients apart from the chocolate into the bowl of a food processor and pulse till it comes together.
    2. Add the chocolate to the mix and using the palm of your hands, shape the dough into balls.
    3. Place in the fridge to set for an hour.

    Details of the figs I use can be found in the paragraph above the recipe.
    If you prefer, use dates instead. Pre soak them for an hour and add 1 tsp coconut oil to the mix.
