So these Gluten Free Rice Krispie Bars with Dark Chocolate are so addictive! They are very very easy to make and a perfect weekend activity to do with the kids.
I first made these one weekend with my darling daughter Maryam. We have begun to make a batch once a week to take with us on our walks and they make perfect travel partners. I mean..they don't answer back, they don't fall apart (no crumbs) and they taste great. I don't make a habit of eating travel partners but these are an exception.
I know I am tired right now because that whole paragraph above sounds so weird when I read it back. I took a little hiatus from the blog and social media this week because I haven't been well and the kids were ill too and were home during the week. I don't know what it is about being ill. You automatically start to feel a little sorry for yourself. I was all 'woah is me..what is my life..', looking out of the window etc etc. I mean seriously. Then my husband was like, 'Saf, this really isn't you, aren't you the solutions girl, aren't you the don't dwell and stop being sad girl..', so i got over it and realised that actually life is pretty good and a cold is not the end of the world. The End.
Anyway, on to the recipe. I buy my gluten free rice krispies from the supermarket. These are the ones I use. Please don't spend £10. Get yourself down to the gluten free aisle in the supermarkets and buy it there. They also have chocolate rice krispies. Woohooo.
About the brown rice syrup. I do buy that from Amazon. So i first began using brown rice syrup after reading about it via Pana Chocolate. They use it to sweeten alot of their desserts. Also, brown rice syrup is stickier and not as sickly sweet as some of the other syrups out there. If you were to replace with maple syrup or honey, it will not work as well.

Gluten Free Rice Krispie Bars with Dark Chocolate - The perfect snack to make with kids!
Ingredients
- 345 grams Brown Rice Syrup
- 80 grams Maple Syrup
- 260 grams Peanut Butter
- 150 grams Gluten Free Rice Krispies
- 1/4 tsp Flaky Sea Salt
- 1 tsp Vanilla Extract
- 250 grams Dark Chocolate (Vegan can be used)
Instructions

In a large pot over medium heat, melt the brown rice syrup, maple syrup and peanut butter. Heat until smooth.

Stir in the salt, vanilla extract and rice krispies.

Press into a small 13x9 inch baking tray with the back of a tablespoon.

Melt the chocolate in a bowl nestled over a pot of simmering water until smooth. Pour chocolate over the rice krispies and rest at room temperature. Slice into 16 - 20 bars. (I got 20!)
