    Green Chilli Avocado Egg Salad

    If you ask my loved ones (especially my mum), what my favourite food is, they will tell you that I have an unhealthy obsession with eggs. It is my main source of protein. I could eat them in a million different ways and never be bored. This Green Chilli Avocado Egg Salad is just one of the many way in which I love to eat eggs.

    To me, nothing comes close to the perfection of eggs. Nutritionally dense, satisfying and so so so versatile. If you have eggs in the house, you have a meal that people won't turn their noses up at. 

    We only eat Free Range eggs at home and I have only recently experienced the deliciousness that is Clarence Court eggs. If you are an Egg lover, nothing compares to that vibrant creamy silky egg yolk. Even my husband is obsessed. They are really rather special. 

    Combine the creaminess of half boiled eggs with a creamy avocado and you have the most delicious salad. I'm all for egg mayonnaise. It can be seriously good but in my opinion this is just as flavourful. 

    Weirdly egg mayonnaise sandwiches remind me of death. Hear me out before you run. I was once asked by a neighbour to make sandwiches when her daughter had passed away. Obviously she isn't indian or South Asian.  I mean..imagine the outrage of being served egg sandwiches at a bereavement. Anyway, I didn't have much time to do make said sandwiches and the easiest thing to make was egg mayonnaise butties. 

    I made them without much thought and then got a message from a chef who happened to be there, saying that they were the best egg mayonnaise sandwiches he had ever eaten. I was quite surprised to be honest and then i thought about egg mayo sandwiches out in the world of the supermarkets. Soggy/stale bread, claggy egg, wilted dying cress.. of course he loved mine. Those sandwiches are  like some form of punishment. 

    This is my grown up and healthier version of egg mayonnaise which I sometimes have in the morning in between 2 slices of thick bread or on a toasted bagel.

    Sometimes I have the eggs with this avocado green chutney instead and it is just as yummy.

    Green Chilli Avocado Egg Salad

    Ingredients

    • 1 large and ripe Avocado chopped coarsely
    • 1 Green Chilli or 1 tsp diced Jalapenos
    • 1/2 Lemon juice only
    • 1 clove Garlic sliced finely, or 2 smoked garlic cloves
    • 1/4 tsp Red Chilli flakes
    • 1/2 tsp Dill Leaves chopped
    • 1 tsp Chives Chopped finely
    • Salt and Pepper
    • 3 Just over half boiled Eggs Chopped coarsely

    Instructions

    1. In a small bowl, combine the avocado, green chilli, lemon juice, garlic, red chilli flakes, dill leaves, chives, salt and pepper and eggs and mix together. Serve in a sandwich. Top with a hot sauce if you like. 

    Recipe Notes

    If you are into gherkins or cornichons, dice about a teaspoon of them and sprinkle in. 

    This also works beautifully with limes.

    If you prefer you can blend the garlic, green chilli and lemon juice into a paste.
