Healing Turmeric and Ginger Chicken Noodle Soup - one of my absolute favourite soups. I could quite happily eat this every single day!
Turmeric is known to reduce inflammation. It is also useful in helping to heal wounds including post pregnancy wounds. Ginger reduces inflammation and is anti bacterial. It aids with digestion, helps to clear congestion and is great for a detox.
I first created this recipe for a collaboration I did with a company called Bumps to Birth in Dubai that specialise in pre packed maternity bags for mums and their babies. Let me tell you though, I have been making this and variations of it for many years. I think most people have and there are so many variations of it. I am yet to make one with dumplings though. I can't wait to try it!
To me this is pure comfort food. It is the most soothing and delicious bowl of homemade chicken soup. It is perfect to fight off the winter sniffles. Loaded with antioxidants, this is like an antibiotic without the tablet.
My Homemade Chicken Soup is basically my mums recipe changed up a bit. It is prepared slowly and flavoured beautifully. I don't include the skin in this recipe because I don't think it is necessary.

Ingredients
- 1 tbsp Oil
- 1 Onion diced
- 2 small pieces Cinnamon
- 2-3 Cloves
- 2 pods Cardamom
- 4-5 Black Peppercorns
- 1 Chicken or 6 - 8 chicken drumsticks cleaned and cut into 8 pieces
- 1 inch Fresh Ginger crushed
- 4 cloves Garlic crushed
- 1 flat tsp Turmeric
- 1/2 tsp Black Pepper
- 1/2 tsp Red Chilli Powder
- 1 large Carrot chopped into slices
- Salt to taste
- Enough water to cover the chicken
- 200 grams Noodles of choice
Instructions

Heat oil in a medium/large pot over high heat, Add the onions and cook for 5 minutes until golden but not browned. Stir in the cinnamon, cloves, cardamom and peppercorns and saute for 2 minutes.

Add the chicken, ginger, garlic, turmeric, black pepper, red chilli, salt and water, Bring to the boil and then simmer with a lid on over low heat for 25 minutes.

Drop in the carrots and simmer for a further 5 mins.

Make noodles according to pack instructions, Add the noodles to the bottom of the bowl and pour over the soup.
