    Indian Spiced Yoghurt Whole Roast Cauliflower -A show stopping vegetarian recipe. Blanched Cauliflower, slow roasted in an indian spicy yoghurt marinade.

    Indian Spiced Yoghurt Whole Roast Cauliflower

    Cauliflower has emerged as somewhat of a superhero in recent years. As versatile as a potato and a real flavour soaker upper. How do you guys feel about cauliflower and have you made cauliflower rice yet? cauliflower pizza base? Cauliflower tabbouleh? Pasta in a Roasted Garlic and Cauliflower Alfredo Sauce, cauliflower mash? Cauliflower salad? Vegan Buffalo Cauliflower Tacos etc etc. 

    I know people have mixed feelings about cauliflower based food stuff. My husband still thinks cauliflower smells of farts. He just doesn't understand the obsession. I for the record, LOVE it. Not as much as I love aubergine, but it's up there. 

    For the record, this recipe was meant to be on the blog almost 3 years ago. The picture is from then too but I quite like it. I never put it up because I thought people would think it was absurd. I think it may be on my Instagram - Scroll back 3- 4 years. Now these whole baked cauliflowers are popping up everywhere so I guess it makes sense to put this recipe up. 

    I'm working out of bed this morning. It was either that or put more clothes on. I opted for the former because there is every chance that I will have to run to the door for the postman soon and shedding clothes so I don't look weird is important especially because as every hijab wearer knows, looking for a hijab is a mission already. I don't need to add to that. The problem with working out of bed is, sooner or later you actually want to have a snooze. It is so comfy and cosy. My eyes are slowly closing. 

    Anyway do try this recipe for roasted cauliflower. It is so delicious! Potatoes optional but is there anything that potatoes doesn't make better. There you go. Decision made.

    How to make Indian Whole Baked Cauliflower

    1. Preheat oven to 180 C/Gas Mark 4.
    2. Cook the cauliflower in a pot of boiling water until just tender - 8 mins and drain well.
    3. Heat oil  and ghee, saute onions for 8 - 10 minutes until golden brown.
    4. Stir in ginger/garlic and saute for 2 more minutes.
    5. Blend along with sugar, yoghurt and spices to form a paste.
    6. Baste over Cauliflower and roast for 20-25 mins, basting with the cauliflower juices halfway through, until golden.
    7. Pop under the grill for 3 - 4 minutes to brown before serving with a squeeze of lemon juice.

    Ingredients

    • 1 Cauliflower Leaves and rough stem removed
    • 2 tbsp Ghee
    • 2 tbsp Oil
    • 1 Onion Sliced
    • 1 tbsp Garlic Paste or 4 cloves Garlic crushed
    • 2 tbsp Ginger Paste or 1 inch Ginger crushed
    • 1 tsp Sugar
    • 500 ml Natural Yoghurt
    • 1 tbsp Coriander Powder
    • 1 tsp Cumin Powder
    • 1/2 tsp Red Chilli Powder
    • 1/2 tsp Turmeric Powder
    • 1 tsp Madras Curry Powder of Garam Masala
    • 1 tsp Salt

    Instructions

    1. Preheat oven to Gas Mark 4/180 C.
