What a mouthful..and it was. The lentil, turmeric spaghetti and coconut lemongrass prawns was a yummy mouthful I mean.
Can you believe that Ramadan is coming to an end soon? I mean seriously how quickly has that gone? How is it going for you? I have really enjoyed it. My parents went for Umrah and it has been nice to see all their updates, especially because they have ended up spending a lot of time with the family of one of my closest friends whose family I am also close to.
By the way how hot is it?! When you look outside, it looks like a normal day and then you go out and end up feeling like a steaming hot jacket potato. However, I prefer this weather to when it is cold. I never used to. I used to hate the heat but I think it suits me better then the cold. It just doesn’t suit my appearance because I am usually red and melting.
Dunno why I am so chatty today..Interesting. I need to cook. I am not sure what I am making but I also have a couple of sponsored jobs to work on and those are always the more nerve wracking posts.
By the way, on the subject of sponsored posts..I know that some people don’t like them but it’s part of the job. Eventually I want to phase that out. Similar to unhealthy recipes. I took them all off and got a bunch of emails asking for recipes that I had taken down so I put them back up. However, I just don’t think they really fit with what I want to do and the direction I want to go in anymore. Whilst I am still in the stage of learning and transition, I don’t want that to confuse people.

Lentil Turmeric Spaghetti and Coconut Lemongrass Prawns
Lentil Turmeric Spaghetti and Coconut Lemongrass Prawns - Gluten Free Spaghetti with a delicious Coconut and Lemongrass sauce and juicy prawns.
Lemongrass and Coconut Base
- 1 Shallot thinly slices
- 3 Garlic Cloves crushed
- 1/2 inch Ginger crushed
- Pinch Red Chilli Flakes
- 150 grams Lemongrass Paste
- 1/2 tsp Salt
- 400 gram tin Coconut Milk
- 250 ml Veg Stock
- 1/2 tsp Turmeric Powder
- 1 tsp Soy Sauce
- 8 - 10 Prawns Deveined and shell removed
- 450 grams Lentil Noodles Use any noodles of your choice
- 1 tbsp Sesame Seeds
- Squeeze Lime Juice
Heat a little oil in a large pan on medium heat and add shallots. Cook for 1-2 minutes, until softened. Stir in the garlic, ginger and chilli and cook for a further minute. Add lemongrass paste and salt and cook a further 1 minute, stirring, until fragrant. Pour in the coconut milk, stock, turmeric and soy sauce, then bring to a gentle simmer. Add the prawns and simmer for about 5 - 7 minutes, until the prawns are cooked and the sauce is slightly reduced.
Cook noodles according to pack instructions and stir into the sauce.
Divide the noodles between 2 bowls and add the prawn mix over the top. Squeeze over a little lime and sprinkle over some sesame seeds.
