    Nutty Crunchy Asian Coleslaw

    A  delicious nutty crunchy asian coleslaw that is ready in 10 minutes and is made with cucumber, carrots, peppers, peanuts, lime juice and peanut butter.

    I know its Autumn and cold (but not really..It's been a pretty warm Autumn so far!), but I had to get this Slaw on the site because it is so good. In my brain, if we are having a warmer Autumn: make a salad. 

    The flavors in this Coleslaw just make my life. Or whatever it is one says these days. I keep hearing people say 'I'm dead' when they find things funny. Its rather strange if you ask me. Anyway moving on. This salad is good because it has within it:

    Lime

    Peanuts

    Pepper

    Carrots

    Cucumber

    and a bunch of other stuff. It’s all so good and the perfect combination of tangy and sweet and crunchy. I have a thing for texture in my food and not everyone gets it. (Talk to the hand mate). That is why I love chopped crunchy salads. Also because they are healthier than crisps or any other crunchy foods I can think of right now.

    By the way, are you feeling the need to bake since Bake Off began? It happens every year. It took me years to get into Bake Off. I really didn't understand the hype and yes now I'm obsessed. 

    I have really had to battle to get todays post out. I just couldn't get into the zone. First I stayed in bed when I should have jumped out at 6am. My daughter was up during the night because she had a cough. To be fair she only woke up once but Maryam isn't the type to do things quietly. She screamed the city down. It went from 0-100 really quickly and before I knew it, I was wide awake. She fell asleep pretty quickly though and so did I. She just needed a little help and attention first. 

    I have some awesome books that have been collecting dust on my shelf that I need to read and that I really want to read today. I am currently reading Russell Brands new book (I know my Insta stories fam know). I wasn't really a fan of his for many years and I remember getting a free tote bag with a magazine that read 'Russell and I wear the same brand', which I rolled my eyes at. I like Russell now though. More in writing. I find it difficult to watch him on talk shows. I don't know why. The book though is fantastic. If you don't like to read or skim over swear words, I would avoid it because Russell likes to swear a lot. (Seriously, when did this become a book review?) Basically the book covers Addiction and the 12 steps to overcome addiction but in a more user friendly format. You can be addicted to so many things and eventually I want to help people with addiction issues so it is a particularly important read for me. Also because I have my own addictions to work through. I am also reading The Spiritual Dimension of the Enneagram. I think I will need a year to talk about that so I guess I will quit whilst I am ahead.

    Anyway, sorry for jumping all over the place today and I hope you enjoy this salad!

    Nutty Crunchy Asian Coleslaw

    Prep Time 10 minutes
    Total Time 10 minutes
    Servings 8

    Ingredients

    • 1 Large Cucumber diced
    • 1 Red Pepper diced
    • 1 Green Pepper diced
    • 1/2 Yellow Pepper diced
    • 2 Carrots diced
    • Handful Coriander leaved chopped
    • 2 Spring Onions sliced finely
    • 1/2 Red onion sliced finely
    • 40 g Salted Peanuts roughly chopped plus more to top the salad with (Honey or Chilli peanuts work too)
    • 1 tbsp Sesame Seeds Optional

    Dressing

    • Juice of 3 limes
    • 3 tbsp Peanut Butter
    • 2 tsp freshly grated Ginger
    • 2 tbsp Rice Wine Vinegar
    • 1 tbsp Sesame Oil
    • 1 pinch Chili Flakes
    • Salt and Pepper

    Instructions

    Dressing

    1. In a large bowl, whisk together the limes, peanut butter, ginger, rice wine vinegar, sesame oil and chilli flakes. Season to taste.
    2. Peel the carrots and cucumbers.
    3. Add the cucumbers, peppers, carrots, coriander, spring onions, red onion, peanuts and sesame seeds to the dressing bowl and toss to combine.
    4. Garnish with more peanuts and enjoy.

    Recipe Notes

    You can matchstick the salad ingredients instead but for ease I tend to dice.
