One tray Herb and Citrus Chicken with Potatoes – One of our favourite meals is this delicious and easy oven baked chicken cooked with citrus flavours and herbs.
It’s finally time for another recipe and I chose this once because it is delicious, healthy, comes with a side of potatoes cooked in the same tray and both the meat and potatoes are tender and moist (Sorry I know this word really gets to some people! Please tell me if you know an alternative?)!
One of my favourite things about this recipe is that you don’t have to babysit it. I talk about this in a lot of posts. A hands off recipe is so important for busy people and this fits the bill perfectly. It is also great for feeding a crowd. By crowd I mean like more then 4 people. I am out of practice in that area so these one tray meals work wonderfully well when I am cooking for more then just my own family.
By the way, marination is everything in this recipe to really get that flavour locked in. I would suggest 24 hours but if you are in a rush 30 minutes will do.
So where have I been? My course came to an end last week but coursework and exams are still happening later this year and early next year. This course is literally the best thing I ever did for myself. I can not say that enough. If you are looking to transform your whole self – mind, body, spirit, then this is the course for you. Yes it won’t be easy. In fact, It will be really really hard sometimes, but It will absolutely change your life and mindset. I first walked into the course completely broken, beaten, fed up and had given up on myself and others. I had completely forgotten how to be me and had held myself back from so many social events and opportunities. Now my mind feels different. I have finally relearnt that it is ok to be myself and people will love me/accept me as I am and that everyone of us is beautiful in our own way and each of us have gifts that are unique to us that we will go out and serve the world with. Through this course, I have met some of the most beautiful souls. People who I have learnt and grown with. People who i let my guard down with, after years of not allowing any one in for fear of being hurt or let down again.
Naturally the more I get towards the end of the course, the more my blog and social feeds will be changing to reflect this. You will be seeing more and more seasonal cooking and vegetarian meals for sure. You will also be seeing information around healing and naturopathy. Yes it feels a million miles away from what I am doing right now but also it will show my journey. I can’t wait to begin sharing what I have learnt with you. I hope you will come along for the ride. Small changes make such a huge difference to the mind, body and soul and I want to show you how that is possible.
One tray Herb and Citrus Chicken with Potatoes
- 3 lb Chicken Drumsticks and Thighs mixed Skinless
- 3 tbsp Olive Oil
- 2 tbsp Butter
- 2 tbsp Mustard English (Colmans)
- 2 tbsp Lemon Juice
- 2 tbsp Orange Juice
- 2 tsp Garlic Powder
- 2 tsp Onion Powder
- 2 tsp Smoked Paprika
- 1 tbsp Brown Sugar
- 1 tbsp Dreid Oregano
- 1 tbsp Dried Thyme
- 1/2 tbsp Dried Basil
- Pinch Chilli Flakes
- Salt and Pepper to taste
Potatoes and Onion
- 8 Medium Potatoes Quartered
- Olive Oil
- Salt and Pepper
- 1 Onion Cut into thick slices
- 2-3 Sprigs Thyme Leaves only
Add the potatoes to the bottom of a large casserole dish, drizzle over the olive oil and season with salt and pepper. Add the onion between the potatoes and sprinkle over the thyme.
Marinade the chicken in all the ingredients under the 'chicken marinade' section. Leave to rest for 45 minutes or overnight.
Preheat oven to 220 degrees, Gas Mark 7.
Add the chicken to the casserole dish and bake in the oven for 1 hour 20 minutes. (Check at 1 hour).
