Perfect Baked Sweet Potato

This is the BEST and EASIEST method to make perfect baked sweet potato that has a crisp skin and a melty soft fluffy middle. No foil required! This is a foolproof method that works every single time.

Health Benefits of Sweet Potato

Roasting sweet potatoes in the oven brings out their natural flavor and sweetness. Perfect baked sweet potato - equals the perfect, healthy side dish.

Sweet potatoes are packed with vitamin C providing almost half of your daily needs per cup. They are also a rich source of Vitamin A. Both are vital for supporting immune function whilst Vitamin A is also key for maintaining healthy skin, vision, and organ function. Vitamins A and C also function as antioxidants that protect cells against aging and disease. A serving of sweet potato delivers a third of your bodies need for manganese, a mineral that helps produce collagen and promote skin and bone health. You'll also get energy-supporting B vitamins and minerals, including potassium. They are also a good source of Fibre.

Fool Proof Method for Perfect Baked Sweet Potato

Preheat oven to Gas Mark 7/220 C.

Wash and scrub the skins lightly to remove any grit. 

Prick all over with a fork.

Whilst damp, sprinkle with salt. This is what gives the potato a crisp skin. 

Scatter the tray with water using wet hands. (Flick).

Bake in a preheated oven for 40 minutes to an hour. This varies according to size/thickness of potato.

To test whether the potato is done press it; it should 'give' a little. Or stick a fork/skewer through the middle.

**This is a recipe adapted from Diana Henry. Her recipe is for a jacket potato and it works well with sweet potato too.

Notes

If you want to make multiple sweet potatoes, make sure there is plenty of space between potatoes otherwise the potatoes will steam rather then bake.

      Tried this with your filling suggestion. I used the feta, spring Onion, Dill and Creme Fraiche for filling.
