Peri Peri Chicken and Spicy Rice Meal Prep - I used to love Nandos but haven't been for years! This easy Peri Peri Meal Prep is quick, delicious and easy to put together.
These chicken thighs are skinless because obviously the skin isn't that great for you even though it tastes so good! These thighs though are succulent, juicy and so so good. I very often crave spicy chicken. I just want to shove it in my face mate.
So about the honey..you can skip it but the reason I use it is because it adds another dimension of deliciousness. Plus it caramelises beautifully. I serve the chicken with spicy rice and sweet potato fries and it is one of those meals I don't mind having all week.
This is a great recipe for getting ahead in preparation for a busy week and I know I am cheating with the ready made sauce. I thought I would check out the ingredients in the sauce to make sure it wasn't drowning in sugar..just in case. I was pleasantly surprised. So obviously there is no way I’m saying that this is an authentic peri peri chicken recipe, but it is a simple recipe. I mean you could of course make your own sauce but sometimes, I ain't got time. Lets be real.
It has suddenly gotten really really cold. As i typed that, my son said the same thing. When it gets cold, my right knee loves to play up. Its like 'yo, helllllo! Notice me..' because I don't usually notice them. Its just something we take for granted like any other body part. I'm laughing at how absurd that sentence sounds. Hahaha. Yep..but basically as soon as I step out into the cold, my knees really start to ache. There is a remedy for it, an ayurveda one that involves making a turmeric 'mask' for it and leaving it overnight but I keep forgetting and have been using a hot water bottle on it instead. There is also a way to eat according to your temperament and weather to make sure that doesn't happen year after year. Its all that eat right for your body type..' I am slowly working on that. The main thing to remember though is that if you are always cold, you need to eat foods that are 'hot' such as ginger. OK..Im going to stop now because this topic needs a whole series of posts.

Peri Peri Meal Prep with Spicy Rice
Ingredients
Chicken Thighs
- 14 Chicken Thighs Skinless
- 3 tbsp Nandos Medium or Mild Peri Peri Sauce
- 1/2 Lemon Juice of
- 1 tbsp Honey
- Salt and Pepper
Sweet Potatoes
- 3 Large Sweet Potatoes Peeled and cut into thin wedges
- 1 clove Garlic crushed
- 1 tbsp Smoked Paprika
- 1 tbsp Mixed Herbs
- 1 tbsp Olive Oil
- Salt and Pepper
Brown Rice
- 1 tsp Oil or Ghee I prefer Ghee
- 1 1 large onion diced very finely
- 525 ml Chicken Stock or Water
- 1 heaped tbsp Nandos Medium Peri Peri Sauce
- 190 grams Brown Rice
- 2 tbsp Chopped Mixed Vegetables
- 1 flat tsp Salt
Instructions
Chicken Thighs

Combine all the ingredients for the chicken thighs in a large bowl/ziplock bag and marinade for 20 minutes.

Line a baking tray with foil and pop into the oven for 30 - 40 minutes or until cooked.
Sweet Potatoes

Preheat oven to Gas Mark 6, 200 C. Combine all the ingredients for the sweet potato on a lined baking tray and mix through with your hands. Roast for 40 - 45 minutes and turn halfway through.
Brown Rice

Heat the oil to a medium sized pot and stir in the onions. Cook for 6 - 7 minutes until golden brown.

Pour in the stock and peri peri sauce and bring to a boil.

Stir in the rice, vegetables and salt. Bring to the boil again, then simmer covered for around 30 - 40 minutes or until cooked. Leave covered for 15 minutes before you open the pot.
Assemble

Once cooled, divide the chicken, sweet potato and rice between meal prep containers and leave covered in the fridge for use throughout the week.
Recipe Notes
You can serve this with a simple dressing or sauce.
