Who doesn't love Hummus? This though is amazing! A rich Roast Garlic and Pumpkin Hummus with Smoked Paprika and Cumin. YUMMY!Roast Garlic and Pumpkin Hummus in a small ramekin with bowl of bread

So i have made this amazing Hummus a few times now. Let’s get real here. When I first made this Roasted Garlic and  Pumpkin Hummus, I basically ate the whole lot to myself as lunch because no one was around to see me basically and I wasn't up for sharing. Plus at least half of this family are still unsure about pumpkin. I know, weird right? So really I was just doing them a favour. Such a martyr. I know.

I have since devoured huge quantities of said hummus all on my lonesome more then 3 times. So basically what I am saying is,roasted garlic and pumpkin hummus is awesome.

Its no secret that I love garlic. I have to continually remind myself not to add 7 cloves of garlic to every meal because my readers may not be as obsessed with it as I am BUT roast garlic, I would encourage you to rest corpus amounts of garlic all day, every day because it becomes sweet, fragrant and soft all at once. I can just eat it straight out of the cloves or spread it directly onto my toast.

Gorgeously roasty cloves are easy to puree and can be added to so many foods to add some garlicky sweetness. I can't explain how well it goes with just about anything savoury. By the way, I also roast the pumpkin obvs. You could use pumpkin puree but I have really struggled to find some this year.  This is a time consuming recipe because of all that roasting butttt it is pretty hands off so please don't be put off by that. Just eat it for lunch and dinner like I do and It wont feel like such a long recipe!
