    Tenderstem Brocolli and Asparagus Quinoa - The perfect side salad to go with any meal - Meal Prep Magic basically. Also its a Vegan Quinoa! YAYY!

    I may sound like an annoyingly excited child today..partially because of this vegan quinoa salad but mainly because its sunny and I have never looked forward to seeing the sun as much as I have this year. This winter was harsh! Oh and it lasted forever..and every couple of days a hint of it came back almost like a threat. Recently I have been putting the heating up and down more times in a week then I have in months.

    Also I am going up north to my mums this weekend. YASS! I really hate it when people say YASSSS, yet here i am....

    Everyone knows that going to your mums after marriage means you feel free, you imagine lying down star shaped on the floor and rolling around in fits of giggles and reliving your youth. It isn't quite like that. Well not all the time anyway. I have a few plans for the weekend and bank holiday Monday and it feels like the last chance I will get before Ramadan to 'chill'.

    You know the feeling when you need to eat healthy because you feel like you have over indulged for say..erm..a week..ok a month..maybe 6 months? Yes, you do..I know you do because you are human. We have all been there at one point. This Vegan Quinoa salad is perfect after that binge. It makes a great side salad and goes perfectly well with so many dishes. I mean..that’s why this salad was created. Meal prep magic basically. Also to reiterate, it is also there to satisfy the need to eat a delicious salad when you may/may not have eaten like a horse the week before.

    This Vegan Quinoa salad is easy to make, delicious and really filling and is really healthy. Also its high in protein, contains veggies,   is vegan friendly OBVS, is quick to make - zero effort required and you can make it in mass quantities so it lasts all week.

    Tenderstem Broccoli and Asparagus Quinoa

    Tenderstem Brocolli and Asparagus Quinoa - The perfect side salad to go with any meal - Meal Prep Magic basically. Also its a Vegan Quinoa!

    Course Side Dish
    Prep Time 2 minutes
    Cook Time 15 minutes
    Total Time 17 minutes

    Ingredients

    Quinoa

    • 170 grams Quinoa 1 Cup rinsed throughly
    • 500 ml Stock of your choice, I use veg
    • 1 tsp Cumin
    • 1/4 tsp Red Chilii Flakes
    • Salt and Pepper

    Dressing

    • 3 tbsp Olive Oil
    • 3 tbsp Lemon Juice
    • 1 tbsp Red Wine Vinegar
    • 3 cloves Garlic crushed
    • 2 tbsp Parsley Chopped finely
    • Salt and Pepper

    Vegetables

    • 3 Tenderstem Brocolli
    • 4 Asparagus Spears
    • 1/2 small Red Onion diced

    Instructions

    Quinoa

    1. In a medium sized pan bring the stock to the boil, then add the quinoa, cumin, red chilli flakes and salt and pepper. Bring to the boil and simmer for 10 - 15 minutes. Fluff with a fork.

    Dressing

    1. Add all the ingredients for the dressing to a small bowl and whisk together.

    Vegetables

    1. Add the broccoli and asparagus spears to a pan of boiling water, cook for 2 - 3 minutes, then drain and chop into 1 inch pieces. 

    Assemble

    1. Add the dressing to the quinoa, along with the red onion, asparagus and broccoli. Mix together until combined evenly. Sprinkle with toasted seeds..trust me!
