    Tiktok Pasta

    There are viral recipes and then there is the Tiktok Pasta that the entire world seems to be talking about and making. Who hasn't made it yet?! Baked Feta Pasta seems to be everywhere right now. Here is my version!

    Tiktok Pasta

    This baked Feta Pasta is delicious!

    I have made it slightly different then the original because I wanted it to be quite creamy but mainly because I wanted to make sure that the kids would eat it.

    The original recipe is by Jenni Häyrinen.

    The recipe is very simple.

    Cherry Tomatoes are roasted with Olive Oil, Garlic and Thyme with a block of Feta.

    This is then used to create part of the sauce alongside the Tomatoes.

    It makes for a luscious, delicious creamy sauce which clings to the Spaghetti!

    Ingredients needed for Tiktok Pasta

    So for the original recipe you need:

    cherry tomatoes – on the vine always taste better to me but use whatever you can find. 

    feta – you want to opt for a creamy

    olive oil – use a good quality olive oil. 

    pasta – you can use any shape you like! I used Spaghetti and the kids loved it.

    garlic – 4 sliced cloves.

    thyme – Thyme or Basil will work. I prefer thyme.

    This is a brilliant recipe and works as it is but I also added:

    1/2 Onion

    400g tinned tomatoes blended

    1 tbsp Zataar 

    1 tsp Chilli Flakes

    3 tbsp Rose Harissa

    Pinch of Sugar

    4 tbsp Mascarpone 

    How to make it

    Preheat oven to 200 C/Gas Mark 6.

    Add Tomatoes, Onions, Garlic, Olive Oil, Chilli Flakes, Sugar, Thyme, Rose Harissa and Zataar to a large oven proof dish.

    Make space in the centre for the Feta.

    Bake for 40 minutes.

    Remove from the oven and add Mascarpone. Bake for a further 5 minutes.

    Boil Spaghetti and drain, reserving some of the pasta water.

    Break the Feta with the tomatoes and swirl together to form a sauce.

    Add Spaghetti with water and mix it all together.

    Tips for making TikTok Pasta

    Boil the Spaghetti less then the pack suggests –

    I like to boil the pasta for 2 – 3 mins less then the pack suggests as it will continue to cook in the sauce.

    Use Pasta Water – Pasta Water helps the sauce to emulsify which makes it cling to the pasta better.

    Use a creamy Feta rather then a crumbly one - Anything that is aged and crumbly won't work as well.

    variations 

    Pasta Shapes – You can use any shape Pasta that you like but I find that Spaghetti or Linguine work best.

    Add Protein – Stir in your favourite cooked protein at the end, such as Chicken, Lamb, Ground Lamb, Prawns.

    You can also add it raw to the dish at the beginning of cooking so that everything bakes together.

    Not prawns, breast or mince though as they will be overcooked. 

    Leafy Greens – Stir in some Leafy Greens such as Spinach, Chard or Kale once it is out of the oven.

    Seasonings – Add spices or seasonings of your choice.

    Lemon –  Add the zest of a Lemon. It always adds a little lift.

    Storing Leftovers

    This keeps well in the fridge for 4 days.

    To reheat, add a splash of water before reheating on the hob or in the microwave.

    To freeze – Freeze in an airtight container for up to 3 months. Defrost in the fridge overnight and reheat gently in the microwave or stove top.

    Ingredients

    • 250 g Cherry Tomatoes
    • ½ Onion sliced finely
    • 4 Garlic Cloves sliced finely
    • 65 ml Olive Oil
    • large pinch Chilli Flakes
    • Pinch Sugar
    • 3 sprigs Thyme leaves only
    • 400 g Tinned Plum Tomatoes Pureed
    • 3 tbsp Rose Harissa Paste Optional
    • 1 tbsp Zataar Optional
    • 200 g Feta
    • 300 g Spaghetti
    • 4 large tbsp Mascarpone Optional

    Instructions

    1. Preheat oven to 200 C/Gas Mark 6.

    2. Add Tomatoes, Onions, Garlic, Olive Oil, Chilli Flakes, Sugar, Thyme, tinned tomatoes, Rose Harissa and Zataar to a large oven proof dish.

    3. Make space in the centre for the Feta and place in the tin. Bake for 40 minutes.

    4. Remove from the oven and add Mascarpone. Bake for a further 5 minutes.

    5. Boil Spaghetti for around 8 - 10 minutes and drain, reserving 200 ml of the pasta water.

    6. Remove tin from oven. Break the Feta with the tomatoes and swirl together to form a sauce.

    7. Add Spaghetti with water and mix it all together.
