I think that this is one of the prettiest desserts ever. Considering that a galette is meant to be a rustic dessert.
It should be pretty too. I had to do a little experimenting to make it work and taste so good. That being said, once I knew how, this was such an easy dessert to make the next time round. Technically, you could use any fruit in this galette.
With juicy fresh peaches and a wholewheat and almond crust, this peach galette is a great way to use up leftover peaches in a healthy way for dessert.
You can make the dough in advance and then this just becomes an assembly job. A galette is basically an open pie and it is meant to look a little rough around the edges and that fills me with delight because seriously I am not the type to make perfectly pretty pastry tarts.
The galette dough is easiest to make in a blender and keeping the butter cold is crucial so you don’t want to handle it too much. I wanted to make a galette for so long but I didn’t want to stray to far away from healthy and this fit the bill perfectly.
This galette turned out so much better then I expected. I may have gone crazy devouring it after it was made. Also can I just say, Oppo Ice Cream is unbelievable. The crust was absolutely delicious, as well as the filling which was sweet, tart and divine. The dollop of ice cream on the top complemented the galette perfectly.
