Baked Gingerbread Doughnuts with Chocolate Glaze

Ingredients
  

Doughnut

  • 90 g Whites Oats Organic Jumbo Oats
  • 1 Small Ripe Banana
  • 1/2 tsp Baking Powder
  • 1/2 tsp Ground Ginger
  • 1/4 tsp of Ground Cinnamon
  • 1/4 tsp Vanilla Extract
  • 40 g Honey
  • 2 tbsp Milk of your choice I used Cashew Milk
  • 2 Eggs

Glaze

  • 1 tbsp Coconut Oil
  • 100 g Dark Chocolate I used 70%

Instructions
 

  • Preheat oven to Gas Mark 4/180 degrees.
  • Put all the ingredients for the doughnuts into a blender and blend on medium low for 1 minute or till combined,
  • Using a tablespoon, spoon equal amounts of mixture into the doughnut baking/silicone tray.
  • Bake for 10 minutes and remove from the oven.
  • Meanwhile melt the dark chocolate and coconut oil by breaking the chocolate into a glass bowl with the oil and placing the bowl over a pan of water. (Make sure the water is not touching the bowl!).
  • Remove the doughnuts from the oven, allow to cool for 10 minutes and pour the glaze over the top of the doughnuts.
