Red Thai Curry Soup with Rice Noodles

Ingredients
  

  • 1 tbsp Oil
  • 1 Onion finely diced
  • 4 cloves Garlic crushed
  • 1 inch of Ginger crushed
  • 2 tbsp Thai Red Curry Paste
  • 1 tsp Salt
  • 1 400 g tin Coconut Milk
  • 750 ml Vegetable Stock
  • Juice of 1 Lime
  • 300 g Fresh Rice Noodles

Instructions
 

  • Heat the oil in a large pot over medium heat.
  • Add the onion, garlic, and ginger, and fry for a few minutes until fragrant and the onions are just golden.
  • Add the curry paste and salt. Stir fry for another 3-4 minutes.
  • Pour in the coconut milk and stock, bring to the boil, turn the heat down and simmer for 5-6 minutes.
  • Squeeze the lime into the soup and mix.
  • Add the noodles and mix through very quickly. This is just so they can soak up the flavour of the soup.
  • Divide the soup between 4-6 bowls and enjoy!
