Cucumber diced
Small Handful Baby Plum Tomatoes diced

small Red Onion
peeled and diced

Red Pepper

Dressing

ml
Olive oil
Juice of 1 Large Lemon

Apple Cider Vinegar
Salt and Pepper
Chickpeas

Olive Oil

x 400g tin Chickpeas drained

Garlic
crushed

ground Cardamom

ground Coriander

Red Chilli Flakes
Salt and Pepper
Instructions
Salad
Combine all the ingredients for the salad in a medium sized bowl.
Dressing
In a jar combine tall the ingredients for the dressing and shake well or mix together in a bowl. Pour over the salad
Chickpeas
Heat the oil and pour in the chickpeas. Add the remaining spices and toss to combine. Cook for 3-5 minutes shaking the pan occasionally.
Assemble
Divide the salad between four bowls and spoon the chickpeas over the top.
