Spiced Chickpea Salad

Ingredients
  

Salad

  • 1 Cucumber diced
  • Small Handful Baby Plum Tomatoes diced
  • 1 small Red Onion peeled and diced
  • 1 Red Pepper deiced
  • 1 tbsp Coriander chopped

Dressing

  • 60 ml Olive oil
  • Juice of 1 Large Lemon
  • 1 - 2 tbsp Apple Cider Vinegar
  • Salt and Pepper

Chickpeas

  • 1 tbsp Olive Oil
  • 2 x 400g tin Chickpeas drained
  • 3 cloves Garlic crushed
  • 1 tsp ground Cardamom
  • 1 tsp ground Coriander
  • 1 tsp ground Cumin
  • 1/4 tsp Red Chilli Flakes
  • Salt and Pepper

Instructions
 

Salad

  • Combine all the ingredients for the salad in a medium sized bowl.

Dressing

  • In a jar combine tall the ingredients for the dressing and shake well or mix together in a bowl. Pour over the salad

Chickpeas

  • Heat the oil and pour in the chickpeas. Add the remaining spices and toss to combine. Cook for 3-5 minutes shaking the pan occasionally.

Assemble

  • Divide the salad between four bowls and spoon the chickpeas over the top.
