Oven Baked Sweet Potato Fries

Ingredients
  

  • 4 large Sweet Potatoes scrubbed, washed and cut into matchsticks around 1/4 inch thick
  • 3 tbsp Olive Oil
  • 1 heaped tsp Dry Thyme
  • 1 tsp Cayenne Powder
  • 1 tsp Smoked Paprika
  • 1/2 tsp Cinnamon Powder Optional
  • Salt and Pepper
  • 1 clove Garlic Crushed
  • 3 tbsp Butter Melted
  • 1/2 tsp Cumin Seeds Optional

Instructions
 

  • Preheat the oven to 220 °C/Gas Mark 7.
  • Place the sweet potatoes on a large baking tray and add olive oil, thyme, cayenne pepper, smoked paprika , cinnamon if using, and a large pinch each of salt and pepper. Mix through using your hands.
  • Spread the fries in an even layer. Do not overcrowd the pan. Transfer to the oven and bake for 15-20 minutes, then flip and bake for 15-20 minutes more.
  • Meanwhile, mix together the melted butter, cumin seeds and garlic. Remove the fries from the oven and coat with the butter.

Variations - You can add any flavourings you like including herbs or spices that you love. You can also add treacle like syrups afterwards such as Pomegranate Molasses or Tamarind. They also work well with a Garlic Aoili or Green Chutney.
