Instructions
Preheat oven to Gas Mark 7/220 C.
Wash and scrub the sweet potato skin lightly to remove any grit. Prick all over with a fork.
Whilst damp, sprinkle with salt. This is what gives the potato a crisp skin.
Scatter the tray with water using wet hands. (Flick).
Bake in a preheated oven for 40 minutes to an hour. This varies according to size/thickness of potato.
To test whether the potato is done press it; it should 'give' a little. Or stick a fork/skewer through the middle.
Notes
If you want to make multiple sweet potatoes, make sure there is plenty of space between potatoes otherwise the potatoes will steam rather then bake.
